Winter squash is a high-power super food, and it’s also incredibly versatile. Here are 25 of my favorite ways to put winter squash on the table. (See also: Cooking With Canned Pumpkin)

On a similar note, zucchini also can be used to make some delicious bread or muffins. I've made some delicious zucchini muffins.
Both squash and zucchini are also an excellent substitute for pasta. If you're doing low-carb dieting or if you just have a squash surplus, you can make a very tasty zucchini or yellow squash lasagna.
Another of my favorites is spaghetti squash. Just chopthe squash into match stick like pieces (julienne) and saute in butter. Top it with alfredo or pasta sauce and it makes a cheap, tasty, and healthy dish.
Great ideas for eating veggies. My family's favorite is butternut squash bread (similar to your tea bread #20). I cut slits in the skin and bake the squash in a dish with water until the squash is tender; then I use the pulp as the vegetable ingredient in a sweet bread (I use my zucchini bread recipe). My recipe makes 3 loaves and those usually disappear in a couple of days. But I love your ideas of finding more ways to use winter squash.
I love when fall comes around and different pumpkin/squash recipes are ripe for the making. One that stuck out to me in this article was the pizza; I just pictured mashed pumpkin or squash as the sauce with some cheese on top. That sounds amazing- it's so cool how versatile the vegetable is, it is perfect for both savory and sweet dishes.
