My favorites are #1 (casserole) and #52 (rolls). Though I have prepared sweet potatoes by microwaving them and baking them, boiling them is one of the best ways to cook them. My nephew taught me this trick: place whole potatoes in a large pot of boiling water; cover and remove from heat; after about 30 minutes, the potatoes will be done and you can peel them easily.

Myscha Theriault's picture

That sounds like a great way to save time, Julie. I'll have to try that next week when I get them ready for the week.

I love roasting a sliced sweet potato and sliced russet potato together for baked "fries," served with aioli. There are few things better than a warm, crispy-on-the-edge bit of sweet potato.
