| Senior Member | I love cooking, but living alone makes it hard.... I have trouble making portions for one person. I've always got a stock of boneless skinless chicken breasts in my freezer (wrapped individually in foil), but I am in a rut as to what I should do with them and would like some new ideas for meals that are good to make in single (or two) servings so as to not waste things much in the form of leftovers. I'm trying to develop a repertoire of go-to recipes that I can make each week. Any ideas would be greatly appreciated! |

Reputation: | I do a lot of stews and soups and casseroles, things that will freeze in single size portions and reheat well. It's a bit more time consuming, but in a short amount of time, you can end up with meals for the week socked away. Beyond that, my go to meals are grilled chicken with veggies. I'm boring like that.

Reputation: | When I was single, I would make something big and freeze it in smaller portions: lasagna, chicken pot pie, chili. These made my frozen dinners when my time or attitude didn't have me cooking. |

| Senior Member | Thanks! I think I'm going to start thinking of big things to make like that and stocking my freezer with frozen single-serving portions. |

Reputation: | I believe that these types of things will last 2-3 months in the freezer, so if you get good at cooking and rotating what you eat, you could build up a great variety of foods. Just be sure to label well if you go that route.

Reputation: | When I worked away from home for an extended period and could only make it back on weekends, we'd spend Sunday making big batches of lasagna, shrimp and cheese grits, red beans and rice, sausage mac-and-cheese, jambalaya, one-pot pasta, that sort of thing. We'd freeze them into tupperware, and those would last me all week. |
