Post Transform Wilty Celery into Tasty Hot Meal

Got some celery and carrot sticks left over from a party tray or wilting in the frig? Bacon strips left from breakfast or extra cooked sausage that didn't make it into the breakfast casserole?

This crockpot recipe easily transforms some odd and end leftovers into a frugal dish when combined with some items you probably already have in your kitchen.

Thinly slice the carrots and celery. Add the leafy celery parts you may have been tempted to throw out. Combine with 1 cup water, 1 teaspoon of vegetable base or bouillon, 1 good squirt of ketchup, a few shakes of dehydrated onion flakes and black pepper. Break the bacon strips or cooked sausage links or patties into 1 inch pieces. Any kind of cooked leftover meat works well. Put all in the crockpot. Cook on high 2.5 to 3.5 hours or until vegetables are tender.

What a great idea...my kids frequently don't eat the veggies in their lunch boxes, and I can only make so much stock.

And I love celery.

That sounds fantastic. I hate using high in the crockpot if I can...using low for the 8hrs normally makes everybody starving by time its done and willing to try anything.

I am actually making split pea soup today and adding some left-over celery and other veggies to the mix!
