Yesterday was the big cook day for us. We managed to make:

1. herb wheat bread (finally got inspired to bake again)
2. kale, spinach, potato soup
3. tofu and broccoli stir fry
4. roasted veggies
5. vegan banana pudding

I didn't make the tortillas from scratch, but I made Mu Chu chicken burritos w/grilled Mexican onions.

I made egg chow mein with stir fried carrots and red bell pepper. Not exactly authentic though as I used dry wholewheat spaghetti instead of chow mein noodles. But I figure, why figure buying special noodles that are often at a high premium at the supermarket since they're imported when wholewheat spaghetti is close enough. If I want the real noodles, I can always get takeaway!

I made a big pot of "rubber lentils" for the first time, and then tried them out in a new recipe: Enchiladas. I made enchilada sauce from scratch (ok, I used Hunt's tomato sauce so that wasn't from scratch) and then made lentil enchiladas. My meat eating construction worker husband liked it, so I guess it turned out! I tend to make up the food as I cook, so that's good!

Chocolate Chip Cookies (Toll House recipe) with M&Ms instead of chocolate chips The M&Ms were on clearance after Christmas for .37 a bag. I picked the red ones out for Valentines and the green ones for St. Patty's one night while I watched the primaries.

Unfortunately I've also eaten several bags.

@lilac,
You're actually still making pretty authentic chow mein. Chow mein only means [stir] fried noodle anyhow. Most Chinese cooks that I know would probably substitute the cheapest wheat based noodles.

@Milehimama
What exactly are "rubber lentils." I've never heard of that before. Lentil enchiladas sounds tasty.

The last couple of days I've made Spanish Rice, Beef Soup with Rivels, and Ginger Cake. Tonight will be Black Bean Tortilla Casserole (I won't be making the tortillas!).

I made pumpkin rolls from scratch. They're delicious and I froze a dozen for later.
