Virtual personal assistants

I keep reading everywhere that the 4 Hour Workweek has popularized the concept of getting virtual personal assistants to do your tasks. I haven't read the book yet and I was wondering:

Exactly what kind of tasks they can be trusted to do. The basics, I suppose, include reading your email, paying your bills, etc. What other tasks can you ask them to do?
What are some trusted firms you've worked with.

I have a system where I use virtual assistants to close my sales for me. Since I market a product that has stand alone value and I have a system that does most of the work for me, the Virtual assistants are pricelss to me as they help me close sales. I just have to focus on one activity that is marketing to make my business run. Leverage I would say is the best part of farming out jobs to make your business run.

How safe is your personal information in this situation? I would wonder how you would settle any issues that would arise with say a company from the Philippines if something cropped up. I would think any legal issues might be difficult.
