I have 4, but I only use 2 to 3 of them. The reason is that the reward systems are different on each card. I use one card for all my restaurant expenses because it gives more rebates and another one for grocery and gas. I also have an Amex exclusively for Costco. It is a pretty manageable amount of cards.

I have the following credit cards:
$7,500 Citibank Home Rebate
$13,000 Citibank Dividend
$4,000 Citibank Business
$9,000 Citibank Professional
$2,300 Discover Platinum
$15,700 Discover Business
$10,000 Discover Miles
$7,300 Discover Platinum
$13,000 American Express Blue
$2,300 American Express Blue Cash
$66,000 Bank Of America Cash Rewards
$2,100 Bank Of America Cash Rewards
$10,000 Chase Visa
$10,000 Advanta Business
$4,000 Washington Mutual
$1,000 HSBC

I have the following store line of credits:
$7,000 OneCall.com store credit card
$6,700 Citifinancial Retail Services Rooms2go store credit
$5,000 Roomstore credit line
$14,700 Suzuki Financial line of credit (via HSBC)

I think that's about it. That's over $210k in unsecured credit that has been extended to me. Pretty scary if you ask me!

I don't have any. I have a mastercard/debit card and have found it works just as well - even for things like renting cars - which I have used it for.

We like to pay cash for everything.

1-5 is a pretty good range I think to have.
