Shall I make croutons? Stuffing? Bread pudding with bourbon sauce? See, stale bread can still be saved!</p> <p>If you don't have time to deal with stale bread at the moment, just toss it into the freezer. When you're ready to make any of the items below, it won't have suffered much more in quality once it's defrosted.</p> <h2>1. Homemade Croutons</h2> <p>My family eats these out of the pan as fast as I can toast them. Just about any bread (except sweet ones) work. Adding warm, freshly baked croutons onto a salad is so delicious, especially if that salad also contains some avocado, tomato, and onion.</p> <p>Here's how to do it: Slice up your stale bread into cubes. Heat a large skillet and add about four tablespoons of olive oil. Add your bread cubes and toss them until they are covered in oil. Sprinkle with garlic salt and any other herbs you like (dried parsley and oregano are good). Over low heat, toast until golden-brown and crispy. Serve immediately. Or, just eat them right out of the pan.</p> <h2>2. Strata</h2> <p>A strata is an almost souffle-like casserole, usually prepared the night before &mdash; which makes it so easy to turn it into breakfast in the morning.</p> <p>Spray a casserole dish with nonstick spray. Lightly butter slices of stale bread and put a layer on the bottom of the pan. Sprinkle with grated cheese. Repeat until the pan is almost full, like you are making a lasagne. Next, crack four to five eggs &mdash; depending on how big a strata you are making &mdash; and whisk together with a half-pint of whipping cream. Pour over the top, add more cheese, and let it sit in your refrigerator overnight.</p> <p>In the morning, pop it into the oven at 350&ordm;F for about an hour (check it at 45 minutes). It will be puffy, cheesy, and delicious. Caution: This doesn't work as well with whole-wheat bread, so stick with French or sourdough. This recipe is very versatile. You can also add a layer of ham or tomato slices on the top. A layer of spinach is good, too.</p> <h2>3. Cornflake-Covered French Toast</h2> <p>Make French toast as usual, except... after dipping the bread in egg/milk, dip it into crushed corn flakes before adding to the skillet. Fry until golden and crispy. Keep pieces warm at 200&ordm;F in the oven until ready to serve. I like mine drizzled with honey.</p> <h2>4. Stuffing</h2> <p>Stuffing is just too delicious to only eat at Thanksgiving. It also <em>needs</em> stale bread, so that it soaks up all the delicious things you will add to it.</p> <p>Here is how I make mine:</p> <p><strong><em>Ingredients</em></strong></p> <ul> <li>10 cups of stale bread cubes (toast in a low oven and cool down, to make sure it will really soak up the other ingredients)</li> <li>1 shallot (a whole shallot, not a section), finely chopped</li> <li>&frac14; cup butter</li> <li>2 T olive oil</li> <li>1 cup sliced celery (with leaves)</li> <li>1 t salt</li> <li>&frac12; t pepper</li> <li>2 t poultry seasoning</li> <li>2 cans chicken broth, heated</li> </ul> <p><strong><em>Method</em></strong></p> <p>Melt butter and olive oil; add salt, pepper, and poultry seasoning. Add shallot and celery; stir until tender. Add bread cubes and stir until coated, and gradually add in chicken broth. If you like a moister stuffing, add hot water until desired consistency is achieved.</p> <h2>5. Meatloaf and Meatballs</h2> <p>I would be remiss if I didn't mention stale bread in meatloaf or meatballs. Our mothers and grandmothers called this &quot;stretching&quot; meat, but it does more than that. Adding bread gives the loaf, or meatballs, a lighter texture, and helps to bind the meat together. I soak my stale bread in milk before adding to the meatloaf mixture. This will keep the meatloaf more moist, too &mdash; no brick-like loaves.</p> <h2>6. Bread Pudding</h2> <p>It may be worth letting your bread go stale just so that you can make this bread pudding. If you don't like a traditional recipe with raisins, substitute chocolate chips. I like both, frankly. I also like mine with a bourbon sauce, but it's also good with some whipped cream. I have had a version with chopped pecans, and that was also a nice addition &mdash; just toast them first. No, the sauce isn't kid-friendly &mdash; although Grandma Ruth allowed us to have some at Christmas, when I was a kid. We'd sneak spoonfuls of it later.</p> <p><strong><em>Ingredients</em></strong></p> <ul> <li>2 cups milk, scalded and cooled</li> <li>4 thick slices of bread, lightly toasted</li> <li>3 T butter, melted</li> <li>&frac12; cup packed brown sugar</li> <li>&frac12; t cinnamon</li> <li>⅓ cup raisins OR chocolate chips (or both!)</li> <li>3 eggs, beaten</li> <li>1 t vanilla</li> </ul> <p><strong><em>Method</em></strong></p> <p>Grease or spray a casserole dish (9 x 9 x 2), or a little larger. Cut or tear bread into pieces and place into casserole dish. Drizzle with butter; sprinkle with sugar. Add the raisins or chocolate chips.</p> <p>To beaten eggs, add the vanilla, cinnamon, and cooled milk. Pour over bread mixture and bake at 350&ordm;F for an hour, or until knife comes out clean.</p> <p>To make the hard sauce:</p> <ul> <li>1 stick butter, melted</li> <li>&frac12; cup brown sugar</li> <li>1 cup of Jack Daniel's Bourbon</li> </ul> <p>Melt butter; stir in brown sugar until melted. Add bourbon. Pour over bread pudding. Swoon.</p> <h2>7. Bread Salad (Panzanella)</h2> <p>This is more of a <a href="http://www.seriouseats.com/recipes/2015/09/classic-panzanella-salad-recipe.html">&quot;stale bread in summertime&quot; recipe</a>, because in addition to the bread, you'll need ripe tomatoes and fresh basil. (You can get those things at a high-end grocery store in the winter, but then your budget will feel it.) I was concerned that the consistency would be soggy, but toasting the bread cubes and draining the tomatoes ensures it isn't. You can easily make this a main-dish salad by adding some sliced salami.</p> <h2>8. Bread Soup (Ribollita)</h2> <p>This is a lovely old recipe which comes from Tuscany. Done in a traditional manner, it takes about 25 hours. Yes, that includes soaking beans. I don't know about you, but it's a pretty rare week when I can devote 25 hours to making soup. Fortunately, there exists<a href="http://www.loveandlemons.com/ribollita-tuscan-white-bean-soup/"> this recipe</a>, which is not only delicious, but can be put together shortly before dinnertime. French or sourdough breads also can be used.</p> <h2>9. Bread Crumbs</h2> <p>Talk about a handy thing to have around, and they're so easy to make!</p> <p><strong><em>Ingredients</em></strong></p> <ul> <li>8 slices of stale white bread</li> <li>1 T Italian seasonings</li> <li>1 t garlic salt</li> <li>1 t onion powder</li> <li>1 t paprika</li> <li>1 t dried parsley</li> </ul> <p><strong><em>Method</em></strong></p> <p>Preheat oven to 300&ordm;F. Tear up the bread and put it in your blender or food processor. Pulse until you have crumbs.</p> <p>In a large bowl, combine the crumbs with the rest of the ingredients. I like to rub them together with my hands to make sure it all gets well-mixed.</p> <p>Spread onto a large cookie sheet and toast for five minutes. Remove and cool for 20 minutes. Store in airtight container. These can be used on pastas, meat, lasagnas, and so much more!</p> <h2>10. Homemade Shake'N Bake</h2> <p>No need to purchase bread crumbs when you have your own! Try dredging thinly-pounded chicken breasts in plain yogurt, with a little lemon juice, and then adding in bread crumbs. Bake at 375&ordm;F for 50 minutes. Or, dredge a thin pork chop in an egg wash, then bread crumbs, and fry. Lastly, coat some halibut or cod with mayonnaise. Cover in bread crumbs, sprinkle with parmesan, and broil.</p> <p>Lastly, if you are just too overwhelmed by thrifty cooking, there is still no need to waste food. She didn't enroll in culinary school until she was 37 years old; to many, that's quite late in your life to begin a new career. And her first television cooking show, <em>The French Chef</em>, premiered on February 11th, 1964. At the time, Julia Child was 50, and it went on to become an enormous hit.</p> <p>What we can learn from Julia, beyond her incredible drive and ambition, is that it's never too late to change your life. And when it comes to <a href="http://www.wisebread.com/16-classic-foods-we-miss">learning skills in the kitchen</a>, she was a very deep well of useful information. Here are 10 of the best pieces of cooking advice I learned from Julia, and still use to this day.</p> <h2>1. Use the Shake and Jerk Omelet Technique</h2> <p><iframe src="https://www.youtube.com/embed/RThnq3-d6PY" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>For years, my omelets were nothing to write home about. Basically, large flat discs of egg that, when cold, could be used as Frisbees. Then, I saw a video of Julia Child making an omelet that forever changed the way I made them. You need to have your burner on the highest setting, and get the pan very hot. Place a nob of butter in the pan, swirl it around, and add your whisked eggs. Then, you do the <a href="https://www.youtube.com/watch?feature=player_detailpage&amp;v=RThnq3-d6PY#t=210">shake and jerk technique</a>. It literally takes seconds to make, and the omelet comes out incredibly light and smooth. It almost melts in the mouth. Try it.</p> <h2>2. Squeeze Your Spinach!</h2> <p>The title on this great clip says it all: &quot;<a href="http://www.wgbh.org/articles/Spinach-Cooking-Tip-Squeezing-It-Seems-Like-Sacrilege-6997">Squeezing it seems like sacrilege</a>.&quot; For many of us, the idea of treating a vegetable this way is abhorrent. You're crushing the life out of it, right? Well, not at all. After cooking your spinach, you have to get rid of all that water before you chop and braise it (butter-braised spinach will turn spinach haters into spinach lovers&hellip; trust me, I am a convert). If you don't, you'll end up with tasteless, watery mush. It's also vital to do this when you layer spinach in lasagna, or add it to a dip.</p> <h2>3. Pre-Cook Poached Eggs in Their Shells</h2> <p><iframe src="https://www.youtube.com/embed/KvSnUmU509k" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>I remember the mess my mum and dad's poached eggs would make in the pan; bits of egg white floating everywhere, and the end result was a very bizarre and misshapen set of eggs. Julia Child solved that little problem for me. You simply <a href="https://www.youtube.com/watch?v=KvSnUmU509k">prick the ends of your eggs</a> with a pin, to let the air escape, and then dip them in the boiling water for 10 seconds, with the shells on. Then, when you crack the eggs into the water, they will hold their shape incredibly well. And remember, add a splash of vinegar to your water, too.</p> <h2>4. Never Be Afraid to Fail</h2> <p>Not just a tip for the kitchen, but a tip for living your life. Julia Child stated, in no uncertain terms, that &quot;cooking is <a href="https://vimeo.com/6202899">one failure after another</a>, and that's how you finally learn.&quot; This should be something you embrace as you set out to cook anything, be it something as simple as the poached eggs mentioned above, or an elaborate dinner. Failing is just learning another way not to do something, and it can only make you a better chef.</p> <h2>5. Cut Up the Turkey Before Roasting</h2> <p><iframe src="https://www.youtube.com/embed/Afdh_i3Kmy0" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>I enjoy a whole roasted turkey at least twice a year&hellip; once on Thanksgiving, and again on Christmas Day. Some people prefer to change it up and have a different meat at Christmas, but it's turkey for me. Anyway, if you pick a particularly large bird, it can take four to five hours to cook the beast. However, using the <a href="https://youtu.be/Afdh_i3Kmy0?t=103">Julia Child method</a>, you can cut that time in half. What she does is separate the breasts from the legs and wings, and cooks them in the same pan. It's an awesome way to get the same tasty meal but much more quickly, and you can still assemble them to look like a whole bird at the table.</p> <h2>6. Sharpen Knives in Circles</h2> <p><iframe src="https://www.youtube.com/embed/dw0Ij1Fxgq4" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>Most of us have a knife set in the kitchen, and that will include a sharpening steel. When you see chefs do it on TV, they do it so quickly it's hard to make out the technique they're using. But on just her second episode of <em>The French Chef</em>, Julia showed everyone just <a href="https://www.youtube.com/watch?v=dw0Ij1Fxgq4&amp;feature=youtu.be&amp;t=164">how to sharpen a chef's knife</a> using a sharpening steel. The technique is one of holding the knife at a 20 degree angle and bringing it down the steel in a circle &mdash; NOT straight up and down. Do this on either side, and do it every time you use the knife, to keep it razor sharp. It has worked for me for years.</p> <h2>7. Add Oil to Your Butter When Sautéing</h2> <p><iframe src="https://www.youtube.com/embed/ZqOzcndykQM" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>A simple tip, and it may seem obvious to many. But for years, I would try (and often fail) to cook food in butter without it turning brown and burning. As Julia explains, by <a href="https://www.youtube.com/watch?v=ZqOzcndykQM&amp;feature=youtu.be&amp;t=154">adding a little oil</a> (peanut or olive) to unsalted butter, you fortify it, preventing it from burning. Do it every time, it's so great not to see your butter turning dark brown.</p> <h2>8. Test Baking Soda in Hot Water</h2> <p>Did you know baking soda has a life expectancy? Well, it does, and it's about six months. You can test your baking soda to ensure it is still active by simply adding a teaspoon of it to a cup of hot water. If you don't see it bubble and fizz, it's time to throw it out and get a new box.</p> <h2>9. Soak Your Potatoes Before Frying</h2> <p><iframe src="https://www.youtube.com/embed/XMqvMaXnzKc" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>I love chips, or as you prefer to say in America, French fries. From an early age, I remember seeing the cut up potatoes soaking in a big bowl of water several hours before my parents would fry them up. Julia Child advises you to do the same. By <a href="https://youtu.be/XMqvMaXnzKc?t=499">soaking the potatoes</a>, you remove the excess potato starch. This stops the fries from sticking together in the fryer, and also makes them come out crispy. Never fry freshly-cut, unsoaked potatoes. They just won't be very good.</p> <h2>10. Give Dough the Smackdown</h2> <p><iframe src="https://www.youtube.com/embed/VXDc2G1hnhs" width="420" height="315" frameborder="0" allowfullscreen="allowfullscreen"></iframe></p> <p>If you don't bake your own bread, you're missing out. Aside from the incredible smell, and the taste of fresh, warm bread, it's also insanely cheap to make. French bread is a favorite of mine, and Julia Child teaches you <a href="https://youtu.be/VXDc2G1hnhs?t=302">how to make great dough</a>. The biggest lesson learned is that you really need to smack that bread down hard on the work surface. Really throw it down hard on the counter from a height, repeatedly. This, according to Julia, is the best way to get the gluten molecules to bond together, forming an elastic dough. Like everyone else, I have to buy supermarket groceries that aren't exactly grown with care or overflowing with sun-kissed flavor.</p> <p>We can't all be locavores all the time, and sometimes, we have to make do with largely flavorless produce and boring staples. If you're like me, facing down a jar of dried garbanzo beans, white rice, and some frozen chicken breast can make it seem mighty tempting to run out for burgers or call in some pizza. But if you are trying to cut down on dining out, whether for financial or health reasons, you've got to tackle that chicken and learn how to make lame food taste good.</p> <p>I've learned to cheat my way to tasty food through a rather liberal use of spices, sauces, and sneaky cooking methods. I rarely use prime ingredients in my cooking, but that's OK &mdash;&nbsp;subprime ingredients can be <em>massaged </em>into behaving like they come from a high-priced grocer.</p> <p>Here are some tasty condiments that have helped me save time and money when I was facing a bland dish or meal. (See also: <a href="http://www.wisebread.com/cheap-ways-to-add-big-flavor-to-your-food">Cheap Ways to Add Big Flavor to Your Food</a>)</p> <h2>Indian Store</h2> <p>Your average Indo-Pak store packs more flavor per square foot that any American-style grocery chain. If you're new to Indian spices, there are plenty of <a href="http://indianfood.about.com/od/thebasics/a/nevercooked.htm" target="_blank">online resources</a> to teach about Indian food. Indian stores actually carry most spices you need &mdash; you can buy cinnamon, cardammom, bay leaves, salt and pepper, cloves, and everything in between at most Indian stores, and you'll find it for MUCH cheaper than you will at Safeway or Whole Foods.</p> <p><strong>1. Masala Spice Mixes</strong></p> <p><img width="365" height="327" src="https://www.wisebread.com/files/fruganomics/u14/masala.jpg" alt="" /></p> <p><em>Photo by </em><a href="http://www.flickr.com/photos/vorty/2750299600/" target="_blank"><em>Stian Martensen</em></a></p> <p>Masala is just a word that means &quot;spice&quot; in Hindi. If you've ever had Indian food, you know that there's no shortage of spice in that cuisine. Indian food snobs will point out that the best Indian food is made with fresh, hand-ground spices that are mixed by each chef to their liking, and that a good conisseur will learn to create their own masalas. These are people with far too much time on their hands.</p> <p>When I make Indian food or just need to make some chicken breast taste better, I use these little boxes of pre-mixed ground spices from my local Indo-Pak store. I usually buy the MDH and Shan brands, mostly because I am familiar with them. If you don't have an Indian store in your vicinity, you can easily find these online. A single box shouldn't be more than $5, and a little bit goes a long way.</p> <p>While these masala mixes are usually made for a specific dish or type of dish, I long ago abandoned any pretense abiding by the rules. So the box says &quot;Chicken Tikka Masala&quot; on it; who cares? The spices are equally delicious used as a rub on a couple of fish fillets just before baking. Masalas can improve roasted veggies, casseroles, soups, and popcorn.</p> <p>The trick to using Indian masalas is making sure that they cook long enough. Sometimes cooking the spices on a frying pan with a little oil on low heat can help get rid of any bitterness and tame the pungency.</p> <p><strong>2. Mint-Cilantro Chutney</strong></p> <p>Also a favorite at my local Indo-Pak grocery is a &quot;chutney&quot; (sauce) made from mint, cilantro, lime juice, and green chilies. It's spicy, salty, and is amazing cooked into almost any meat dish. It can also be mixed with sour cream or yogurt for a savory dip with international flair.</p> <p><strong>3. Marie</em></a></p> <p>I don't mean to go overboard on Indian food, but you can't get much more flavorful than <a href="http://en.wikipedia.org/wiki/Indian_pickle" target="_blank">Indian pickle</a>. &quot;Pickle&quot; is a loose term in India and Pakistan &mdash; as far as I can tell, it means &quot;fruit or vegetable in a jar with oil and spices.&quot; It can range from lemons to green mangoes to spicy chilies to Indian gooseberries to carrots to ginger and beyond.</p> <p>As with anything else from an Indian store, you don't need much to pack a powerful punch of flavor. A spoonful of green mango pickles can lend a mouthwatering spiciness to three-day old rice (just add a couple of eggs and stir fry on high heat for a couple of minutes). A spoonfull of mashed Indian pickle makes regular old ground beef sing with succulence, adding panache to lasagna, meatloaf, or burger patties.</p> <p><strong>4. You can find tamarind sauce in most East or South Asian grocery stores. It looks a bit like A1 sauce, but is more tangy and less savory.</p> <h2>Chinese/Vietnamese Store</h2> <p>Chinese and Vietnamese grocery stores are often a good place to buy cheap, fresh fruits, and vegetables. My favorite chain in Washington, Ranch99, offers giant bundles of greens for less than two dollars. Of course, the sauce aisles offer amazing selection, as well.</p> <p><strong>5. It's a popular staple on many an Asian restaurant's condiments counter. Sriracha is spicy pepper sauce that was made popular by pho restaurants (you can read about the <a href="http://www.nytimes.com/2009/05/20/dining/20united.html?pagewanted=all" target="_blank">confusing history of Sriracha here</a>). It is spicy and salty, a perfect topping for $1 frozen pizzas, tacos with under-seasoned meat, and too-sweet teriyaki. It's also a brilliant addition to spaghetti sauce, stews, homemade chicken pot pie, and cold noodle salads. Whether cooked in or squirted on top, Sriracha will add a kick to any dish that needs spice.</p> <p><strong>6. Sure, lots of <a href="http://www.mayoclinic.com/health/monosodium-glutamate/AN01251" target="_blank">people have reactions to MSG</a>, but I don't, and so I'm going to eat it until it gives me cancer. This much maligned and misunderstood chemical compound can be purchased in small packets of crystals. Just add a small sprinkle to bland dishes, and MSG magically enhances the flavor of all ingredients, from meat to garlic to salt.</p> <p><strong>7. Chinese Vinegar</strong></p> <p><img width="500" height="375" src="https://www.wisebread.com/files/fruganomics/u14/vinegar.jpg" alt="" /></p> <p><em>Photo by </em><a href="http://www.flickr.com/photos/joyosity/3226329675/" target="_blank"><em>joyosity</em></a></p> <p><a href="http://www.wisebread.com/10-weird-and-wonderful-ways-to-use-vinegar">Vinegar is just all-around awesome</a>, but many people have never tried <a href="http://en.wikipedia.org/wiki/Rice_vinegar" target="_blank">Chinese black rice vinegar</a>, which is dark, tart, and smoky (sometimes made from black rice, but often from millet or other grains). If you have ever had traditional Chinese dumplings in an authentic restaurant, you were probably served a small dish full of black vinegar and shreds of fresh ginger alonside. This is Chinkiang vinegar &mdash; it looks like balsamic, but lacks the sweetness, and has greater depth and a higher salt concentration. I've never found Chinese vinegar outside of Asian stores, and even inside Asian stores, I often have to hunt for it.</p> <p>Chinese vinegar has a deep flavor that can be used to add tartness to dishes that are too sweet. It's great for making hot and sour soup or any East Asian-themed stew.</p> <p><strong>8. It packs a salty, fishy wallop with a healthy dose of <a href="http://en.wikipedia.org/wiki/Umami" target="_blank">umami</a>, and can add flavor to soups, casseroles, pasta sauces, meat loaf, and chicken dishes. Like most condiments mentioned here, you don't need much fish sauce to get excellent flavor, so don't go overboard with it.</p> <p><strong>9. I use it extensively in soups and marinades for steak and fish, as well as in sauces and reductions.</p> <ul> <li><a href="http://en.wikipedia.org/wiki/Ponzu" target="_blank">Ponzu sauce</a> is lighter than soy sauce and has a citrus flavor (usually yuzu, but sometimes from other citrus fruits). Like soy sauce, it provides a savory flavor enhancement to stews, casseroles, meatloaf, and grilled veggies, but with a lighter, slightly less salty, springier taste.<br /> &nbsp;</li> <li><a href="http://www.nestle-family.com/maggi/english/" target="_blank">Maggi seasoning</a> is often thought of as an Asian ingredient because of its popularity in Asian countries, but it's actually from Austria. Created as a meat-substitute flavoring, it is often compared to soy sauce in flavor, although it contains no actual soy.</li> </ul> <h2>Any Ol' Grocery</h2> <p>The following items can be found at pretty much any grocery store, anywhere, and can save you from another meal of boiled potatoes and chicken.</p> <p><strong>10. It brings out the flavor in food in a much different way than regular table salt. Sure, you'll pay a bit more, but you get more zing for each penny.</p> <p><strong>11. I will often marinate a tough cut of beef in marinara or fresh salsa for a day or so before throwing it in the slow-cooker. The results have always been spectacular. When cooked, tomatoes have an umami quality that is very satisfying, and you don't have to splurge on pricey organic tomato sauce if you're just going to throw it on top of fish and bake it. In a pinch, a can of Spicy V-8 can be substituted.</p> <h3>12. I've also found that ketchup does an amazing job of adding a hint of savory tomato taste to boring soups, wan tomato sauces, and pretty much any meal containing ground beef.</p> <p><strong>13. You can substitute dry mustard powder for a stronger flavor. I like to add mustard to beef stew &mdash; it changes the flavor profile without diluting the meaty goodness. Mustard is also a great way to add dimension to stir-fried veggies and curries.</p> <p><strong>14.
