My cooking clients, who usually own every top-rated, food-related tool and gadget, are always shocked when they see how I cook at home in my tiny kitchen. Contrary to what you see on cooking shows, you can cook pretty much anything with these basic tools.</p> <h2>1. Deep Sauté Pan</h2> <p>If I only had room for one pan in my kitchen, that pan would be the vintage Magnalite Professional, 10-inch sauté pan that my husband brought into our relationship. It gets used constantly so it lives on the back burner of our stove. It's made out of anodized aluminum. Most people think that it's cast iron because it's black from years of seasoning, which also makes it so non-stick that it's our go-to pan for cooking eggs.</p> <p>Magnalite Professional skillets sell for around $60, used, <a href="http://www.ebay.com/itm/25cm-10-Saute-Fry-Pan-Magnalite-GHC-Professional-Anodized-Aluminum-Skillet-LID-/172292994345?hash=item281d767529">on eBay</a>, but I've seen them for much less at thrift stores. If you are skeeved-out by aluminum, buy a <a href="http://www.wisebread.com/the-5-best-cast-iron-skillets">cast iron skillet</a> instead.</p> <h2>2. Nonreactive Dutch Oven</h2> <p>My second favorite pan is an <a href="http://amzn.to/2dIY9ga">8-quart stainless steel Dutch oven</a>. Since I make a lot of high-acid, preserved foods, I need a nonreactive pan to cook down everything from my marmalades to my tomato sauce. Because of its large size I can use the Dutch oven as a stockpot to make 8-quarts of soup, or to boil water for pasta. It also works as a roasting pan in the oven. This is my favorite pan for frying, as the tall sides keep grease spatter to a minimum.</p> <h2>3. Nonreactive, 2-Quart Saucepan With Lid</h2> <p>I am a big believer in multi-purpose tools for smaller kitchens. Why own a tea kettle if a 2-quart saucepan with a lid heats water just as quickly? And, as much as I like the convenience of a rice cooker, I learned how to cook rice from my Auntie Wa, who made perfect rice, every day, for 85 years, in a pan. I also use this smaller pan to cook my morning oatmeal, melt butter for recipes, reheat leftovers, and make pasta sauce.</p> <h2>4. 8-Inch Chef's Knife</h2> <p>The workhorse knife in any professional kitchen is a chef's knife. While a longer blade will obviously give more cutting surface with less effort than a shorter one, people with crappy knife skills should opt for a shorter knife, as it's easier to control. So, instead of buying a 10-inch chef's knife, go with an 8-inch or even a 6-inch blade.</p> <p>While a great knife is a work of art, if you go into just about any restaurant kitchen anywhere in the country, you will find the kitchen staff making your food with a Dexter Russell knife. The <a href="http://amzn.to/2dHhGyR">Dexter Russell 10-inch chef's knife</a> is actually my husband's favorite knife. He's used this knife daily for 20 years, so they are durable as well as inexpensive.</p> <h2>5. Paring Knife</h2> <p>Chef's knives are versatile, but paring knives are better for small jobs like peeling potatoes, shaving garlic, or supreming grapefruit.</p> <p>The most expensive knife that I own is my <a href="http://amzn.to/2dTujW1">Wusthof Classic 12-cm paring knife</a> that I bought on sale for $40. At 4.5 inches, it is about an inch longer than a standard parer. The longer blade length turns this into a utility knife. Along with its paring abilities, I use this knife to filet fish and bone meat.</p> <p>There have been endless gear tests of paring knives that show that there's not a whole lot of difference between a $5 paring knife and a $60 paring knife, so use what you've got.</p> <h2>6. Bread Knife</h2> <p>The long, serrated edge of the bread knife makes quick work of large, fibrous fruits and vegetables like squash, watermelon, and pineapple, and easily slices tomatoes. I own a Tupperware Chef Series Pro bread knife that I got for free as a hostess gift.</p> <h3>A Note About Knife Safety</h3> <p>I have horrific knife skills. The only reason I still have all my fingers is that I use the right knife for the job and keep my knives sharp. Contrary to popular belief, dull knives are the cause of more kitchen accidents than sharp knives. A dull knife is more likely to skid off waxy-skinned produce like tomatoes, and you have to use a lot more force to cut with a dull blade. <a href="https://www.chefsteps.com/activities/do-you-need-an-expensive-knife">In this video</a>, a chef proves that a sharpened 99-cent thrift store knife can out-perform a $400 dull knife.</p> <h2>7. Kitchen Shears</h2> <p>If I had better knife skills, I wouldn't need shears. But I don't, so I use my kitchen shears to cut poultry. I save so much money by buying whole chickens and parting them out at home, that my <a href="http://amzn.to/2diDf8g">Tupperware Multipurpose Shears</a> paid for themselves in the first year of ownership. Although I have owned many pairs of shears, I find the Tupperware shears are the easiest to disassemble and clean.</p> <h2>8. Two Wooden Cutting Boards</h2> <p>Which cutting board is safer? Plastic or wood? My preference is for wood, not only because I believe <a href="http://faculty.vetmed.ucdavis.edu/faculty/docliver/Research/cuttingboard.htm">this food safety study</a>, but also because wood boards are more versatile. Even the most hacked up wooden cutting board can be used as a cheese board or a trivet and still pass for charming. Also, I've revived my jankiest wood cutting boards by sanding them down. Old plastic boards get gross looking over time, even if they are kept super clean.</p> <p>To avoid cross-contamination, I own two cutting boards. I use one cutting board exclusively for meat, and one board for cutting everything else.</p> <h2>9. Wooden Spoons</h2> <p>I can't actually remember the last time that I bought new wooden spoons, as some of mine are over 20 years old. In addition to their durability, I prefer wooden spoons to metal and plastic, because wood stays cool, doesn't melt, and won't scratch my pans. Also, they are cheap to purchase. In my neighborhood, they sell for about $1 each at the hardware store.</p> <h2>10. Silicone Spatula</h2> <p>I always appreciate my spatula when I am trying to get that bit of cake batter out of the bowl for that last cupcake. It's a money and food-saving tool. I prefer using a silicone spatula over the less expensive rubber models because silicone is heat-resistant up to 400&ordm;F. After seeing how mold can grow between the head and the handle of a spatula (gross), I prefer using <a href="http://amzn.to/2dHjlod">one-piece design spatulas</a>. I also like using dark-colored spatulas because they hide food stains that can't be washed out. Good quality spatulas cost less than $15 and will last years.</p> <h2>11. Turner</h2> <p>Most people call this tool by its generic name &quot;spatula,&quot; but the technical name for the thing you flip pancakes with is &quot;turner.&quot; I recommend getting the wood-handled, metal turner that is used by fry cooks everywhere. Look for a turner that is wide enough to flip fish and burgers without splitting them, but has a thin, sharp edge for lifting dainty cookies off a baking sheet.</p> <h2>12. Metal Tongs</h2> <p>Obviously metal tongs are great for grilling. In addition to gripping steaks, they are also great for pulling bones out of hot chicken stock, grabbing cooked spaghetti, and moving cake pans around in the oven when you realize you left your hot pads in the laundry hamper. I use 14-inch long tongs. Anything shorter puts my hand too close to the heat.</p> <h2>13. Hot Pads</h2> <p>I have small hands, so oven mitts never fit me properly. This makes me clumsy. This makes me dangerous. I prefer using the old-fashioned, quilted, square hot pads instead. They are easy to make and cheap to buy. Also, they double as a decent trivet in a pinch.</p> <h2>14. Metal Ladle</h2> <p>I don't know why everyone doesn't own a ladle. Using a coffee cup to scoop soup into bowls is not a great work around. I like metal ladles because I don't have to worry about them melting if they touch a stove burner by accident.</p> <h2>15. Fine Mesh Strainer</h2> <p>Strain soups and jams. Use it as a colander to wash small amounts of food. Sift together dry ingredients for baking.</p> <h2>16. Can Opener</h2> <p>Plus, it'll be a crucial tool you'll need during the zombie apocalypse.</p> <h2>17. Measuring Spoons</h2> <p>I like metal spoons because I'm old-school. I bought my set at a restaurant supply store for $5.</p> <h2>18. Measuring Cups</h2> <p>Yes, you really do need both dry and liquid measuring cups if you want accuracy. Cook's Illustrated found that people mismeasured by as much as 23% when they <a href="https://www.cooksillustrated.com/how_tos/5450-dry-versus-liquid-measuring-cups">used the wrong type of measuring cup</a>. I bought my latest set of dry measuring cups at a restaurant supply store. They cost $5 and look identical to the set that costs $40 from a fancy cooking catalog. I use a <a href="http://amzn.to/2e7gaEk">2-cup Pyrex measuring cup</a> that I bought at the grocery store. It's dishwasher, refrigerator, and microwave-safe, so it's great for pouring melted butter over popcorn and mixing salad dressing.</p> <h2>19. Citrus Reamer</h2> <p>Ever wonder where the saying, &quot;You got reamed,&quot; came from? Now you know. Because I have access to so much free citrus, I actually bought an electric reamer to help me keep up with my lemon tree, but I like <a href="http://amzn.to/2epddlO">this manual juicer</a> because it comes with two different reamer sizes.</p> <h2>20. Mixing Bowls</h2> <p>Just like with pans, it's better to go too big than too small when it comes to mixing bowls. Get the biggest bowl that will fit in your kitchen. I got a set of four nesting <a href="http://amzn.to/2dZoe9P">Pyrex mixing bowls</a> years ago as a gift. If I had my druthers, I would ditch all but the biggest bowl. Alas, my husband likes to prep his ingredients like he's cooking on a TV show, so he uses the smaller bowls all the time. Luckily, the bowls look nice enough to double as serving bowls for most meals.</p> <h2>21. Food Processor</h2> <p>I bought my 11-cup Cuisinart food processor at a garage sale 20 years ago for $30 and I think I've collected every blade that fits my model. (It hides my poor knife skills.) In addition to chopping, slicing, and pureeing, I use it to grate cheese, cut pastry dough, and whip <a href="http://www.thekitchn.com/tip-for-perfect-whipped-cream-138899">the best whipped cream</a></p> <p><strong>Pro Tip</strong>: To save money and storage space on appliances, share them with a neighbor. <a href="http://www.wisebread.com/how-i-saved-30000-and-helped-the-earth-at-the-same-time">I share my Cuisinart</a> and many of my specialty tools with my neighbor Alexandra, who also loves to cook.</p> <h2>22. Food Thermometer</h2> <p>You'll have to pry my <a href="http://amzn.to/2e4TWSf">Thermapen Mk4</a> thermometer from my cold, dead hand&hellip; and then use it to assess my time of death. It's super accurate. I cooked for a long time without a food thermometer, which means that I spent years worrying that I had overcooked the bread and undercooked the chicken. It makes canning so much easier, now that I can tell the instant that my marmalade has reached gelling point. I don't have to manually test to find out that my candy has reached the soft-ball stage. And I can check that my freezer and refrigerator are set to the right temperatures for food safety in less than five seconds.</p> <h2>23. Oven Thermometer</h2> <p>Over time, every oven loses calibration. The temperature knob may say 350&ordm;, but the internal over temperature could be as much as 100&ordm; off. For example, to bake cookies at 350&ordm; in my vintage Wedgewood oven, I have to set the temperature knob to 375&ordm;. To ensure that your food is cooked at the proper temperature, invest in an <a href="http://amzn.to/2diGhtm">oven thermometer</a>. Even if it saves you from burning just one dinner, it's worth the price.</p> <h2>24. Hand Mixer</h2> <p>I love my KitchenAid stand mixer, but if you only bake a few times a year, an <a href="http://amzn.to/2e7g2F9">electric hand mixer</a> will get the job done. You can buy hand mixers for around $15 new, and for even less at garage sales.</p> <h2>25. Rimmed Baking Sheets</h2> <p>Instead of a flat cookie sheet, I prefer to bake on jelly roll pans. The small edge of the jelly roll pan keeps my oven clean by preventing melted cheese, frosting, or glaze from dripping off the pan and fusing, concrete-like to the bottom of my oven. Because I bake around 80 dozen cookies during the holidays, I need four pans to keep the baking process speedy.</p> <h2>26. 9 x 13 Inch Baking Pan</h2> <p>Professional bakers use multiple baking pans, but I own just one <a href="http://amzn.to/2epeRni">9 x 13 Pyrex baking dish</a> to bake all my sheet cakes, bar cookies, pastries, lasagna, and casseroles.</p> <h2>27. 9 x 5 In Loaf Pan</h2> <p>I learned to <a href="http://amzn.to/2e3P30X">bake bread inside a coffee can</a>, which is still my preferred method. Not only can I fit more cans in my oven, the slices come out perfectly round. So cute! If can cooking is too hobo for you, I recommend owning two bread pans, because many recipes make two loaves. Since they stack inside one another, the second loaf pan takes up only a small amount of extra room.</p> <h2>28. Coffee Pot</h2> <p>I use a four-cup French press to make my coffee. It makes up to four cups of coffee at once, has a slim profile, generates no trash other than coffee grounds, and is easy to clean. Oh, and I can make a great cup of coffee in it!</p> <h2>29. Whetstone</h2> <p>If you are on a budget, you can save on the cost of paying a professional knife sharpener to sharpen your knives (and scissors, and shovels) by learning how to sharpen your edged tools using a whetstone.</p> <h2>30. Crock-Pot</h2> <p>The Crock-Pot is a brilliant tool for people on a tight budget and a tight schedule. They are also great for taking the stress out of <a href="http://www.wisebread.com/11-thanksgiving-recipes-you-can-make-in-your-crock-pot">holiday entertaining</a>.</p> <h2>31. Fire Extinguisher</h2> <p>The best way to avoid a kitchen fire is to own a fire extinguisher. If you can't remember, that chore is probably overdue. However, it's not necessary to break out the harsh chemicals. Go in like Grandma and arm yourself with baking soda, vinegar, lemons, and salt. You'll love the results and fresh, clean smell. Plus, the environment will appreciate it, too. Dishwasher</h2> <p>Seems odd, doesn't it, that a machine that spends its life washing dishes would get so grimy. Soap scum starts building up, and sometimes we aren't good about rinsing before we place dishes inside. Baking soda and vinegar to the rescue!</p> <p>First, take out the filter and soak it in some dish liquid. After it has soaked, get a soft toothbrush and give it a gentle scrub. Put it back, and get out the vinegar and baking soda. Pour a cup of vinegar into the bottom of the dishwasher, and run it through a cycle. That should eliminate the rest of the gunk. If you still have odors after that, sprinkle a little baking soda in the bottom of the dishwasher, let it sit, and then run a cycle again.</p> <h2>2. Toaster</h2> <p><iframe width="560" height="315" src="https://www.youtube.com/embed/_MHCI8fhhZc" frameborder="0" allowfullscreen=""></iframe></p> <p>This morning, I set off the smoke alarm while attempting to make my toast. That was a really good reminder to clean the toaster. Ever cleaned a toaster before? It's not hard, but there are some important steps. Butcher Block</h2> <p><iframe width="560" height="315" src="https://www.youtube.com/embed/PgJlScAHXPA" frameborder="0" allowfullscreen=""></iframe></p> <p>Butcher blocks can be a beautiful part of your kitchen. They're even collectible now, so take heed and keep yours clean. Butcher blocks need maintenance and frequent cleaning. Daily maintenance should include spraying with vinegar and wiping them down. For more stubborn stains, <a href="https://www.youtube.com/watch?v=PgJlScAHXPA">clean your butcher block</a> using some natural cleaning tricks.</p> <h2>4. Rusty Knives</h2> <p>Ever get those rust spots on knives? Combine equal parts warm water and lemon juice in a cup. Put in your rusty knives, soak for 10 minutes, and rinse; dry with a kitchen towel. If you love your knives, please don't put them into the dishwasher &mdash; wash by hand, carefully.</p> <h2>5. Coffee Maker</h2> <p>It never hurts to wash the carafe and filter basket in warm, soapy water after use. You should also periodically wipe up spills on the heating element. But then, there is that water reservoir, which really needs your attention. It's a favorite hangout for yeast, mold, calcium deposits, and other gross stuff.</p> <p>Put a filter into the basket, and then fill the reservoir with equal parts of water and vinegar. Hit the &quot;on&quot; button, and let it run. Stop the machine, and let it sit for 30 minutes. Then, turn it back on, finish brewing, and pour it all out. Rinse by running water through another brewing cycle.</p> <h2>6. Blender</h2> <p>For a grimy blender, fill halfway with hot water. Add a drop of dish soap. Cover with lid, and hit the &quot;on&quot; button. Blend for 30 seconds and then pour out the soapy water. Add more hot water (halfway) and blend again two or three times to rinse.</p> <h2>7. Microwave</h2> <p>All of those splutters and spills add up in the microwave &mdash; an oft-forgotten appliance to clean (and they are usually the worst in offices). Pour a cup of vinegar into a two-cup glass measuring cup. Add a cup of water and microwave for 10 minutes. Let it steam up the microwave for another 20 minutes, then wipe it all out with paper towels.</p> <h2>8. Reusable Tote Bags</h2> <p>Think about where those bags have been, and you'll realize... Yuck. Hopefully, you have the kind that you can toss into the washer, because odds are, they're harboring bacteria and possibly E coli.</p> <h2>9. Sink</h2> <p>Baking soda works about as well as chemical cleaners, and it's so much safer for the environment. Use as you would a powdered cleaner. For really stubborn stains, add salt to the baking soda, and try a natural-bristle brush to scrub.</p> <h2>10. Oven</h2> <p>If you own a self-cleaning one, you're good to go. Although you may want to read up on some of the issues associated with actually using that feature, due to the high temperatures. What about the rest of us (me, included) who have gas ovens, or non-self-cleaning electric ovens? There are natural ways to clean ovens using things like vinegar and baking soda. However, a caveat: Check your manufacturer's manual. If you cannot find your manual, look up the brand online, where most manufacturers have PDFs of manuals posted. Also, what may apply to electric may be downright dangerous with gas. If you have gas, you have to turn off your pilot light and the gas before cleaning.</p> <h2>11. Fridge</h2> <p>Don't use dishwashing detergent, which may leave an odor on your food. Instead, use baking soda and hot water. Remove racks, wash, and rinse. Wipe down all the walls of the refrigerator and dry before reinstalling racks. Don't forget to remove the drawers and wash those, too.</p> <h2>12. Clean the Cleaning Stuff</h2> <p>You've probably heard that your kitchen sponge is dirtier than your toilet seat, but in case you didn't, throw your sponge out. Get a new one. Once that has been accomplished, sanitize it regularly. Get it wet, and toss it into the microwave for a minute. If you have a dishwasher, you can run it through the longest and hottest cycle. Lastly, try soaking it in a solution of bleach and water (&frac12; teaspoon per quart of warm water) for a minute. If you use dishrags, use a fresh one each day.</p> <h2>13. Grocery &quot;Cold&quot; Bags</h2> <p>I use my insulated bag every week when I load up my groceries. Yesterday, however, I went to pop in the grocery bags, only to discover that meat juices had previously leaked. Yuck! I turned that bag inside out, washed with hot, sudsy water, and left it outside in the sun to dry thoroughly.</p> <h2>14. This device clamps on to any pot or container and will heat the water and cook the meat at an even temperature. What is neat about this device is that you can program it through your phone, so you don't even need to be at home when you are cooking.</p> <p>We started off with a stainless silver pot we already had, but were only able to cook two bags of meat at once. You can also use your Crock-Pot or other large container. Some people have even used ice coolers.</p> <p>A&nbsp;<a href="http://amzn.to/2cnYJxO">12-quart Rubbermaid container</a> was less than $20 on Amazon, and proved a better solution since we bought a lid with it. My husband cut a hole in the lid for the sous vide machine to keep the water temperature more accurate and prevent evaporation on longer cooking sessions.</p> <p>You can use regular gallon-sized zipper food storage bags, but we decided to go with something a little sturdier (and safer to use in heat). The <a href="http://amzn.to/2cnYXVJ">FoodSaver Gallon-Sized Vacuum Bags</a> can be reused if washed well. You don't have to buy the hand-held vacuum to seal the bags either. Simply zip the bag 98% and then dunk the bag in a pot of water. The pressure of the water will push the excess air out.</p> <p>In total, we invested about $175 for the above items, which is a deal compared to how much other chefs and home cooks spend on their sous vide systems. Fondue Sets</h2> <p>My mother had two fondue sets, one in gold and the other in a rusty red. Fondue was a 1970s party phenomenon, and my mom led the pack. She would put on meat fondue parties, cheese fondue parties, and top it off with chocolate fondue for dessert. I learned to light a Sterno can at an early age. Fondue parties are still fun, so if you want to dig your mom's set out and convince her to sell, you can probably get $20 to $30 for it.</p> <h2>2. Cookie Cutters</h2> <p>If you have only ever used plastic cookie cutters, you are missing out. Metal cutters are far superior, as they give cookies a more identifiable shape. Some are merely cookie outlines, and some &mdash; like my grandmother's &mdash; have a nifty handle on top. The older they are (the tin will be dark), the more valuable they become as collectibles. Not only are they practical, but they also look great just as decoration in a kitchen. Depending on age and condition of the cutter, you can resell for $3 a piece, and up.</p> <h2>3. Pyrex</h2> <p>I'm a total sucker for Pyrex casserole dishes and bowls, and am willing to fight to the death at a garage sale if I see them. They're so durable, work beautifully, and come in terrific patterns. If you have some, sell them and earn cash, or watch garage sales for popular patterns to resell. Keep an eye out for patterns known as Blue Dot, Gooseberry, Butterprint or Snowflake Blue, as these tend to be more popular.</p> <h2>4. Butcher Blocks</h2> <p>Even if they aren't in the best condition, you may be able to sell a butcher block for big bucks. &quot;Distressed&quot; is a trendy style, and they look great in both farm-style or modern stainless-steel kitchens. You may be able to fetch a fast $50 for a 10x20. Find one in rough shape? You may be able to <a href="https://www.youtube.com/watch?v=-DHMGQOEnqM">recondition</a> it before you sell it.</p> <h2>5. Crocks</h2> <p>With the resurgence of people making their own fermented food, like kimchi or sauerkraut, Crocks are all the rage. The most valuable are ones with salt-glaze finish (bumpy to the touch), or Crocks with decorations like flowers beneath the glaze, or ones with numbers stencilled on them. These can easily sell for over $100.</p> <h2>6. Cast Iron Skillets</h2> <p>There are actually conventions and meet-ups where people seek quality <a href="http://www.wisebread.com/the-5-best-cast-iron-skillets">cast iron skillets</a> like the Griswold line. Buyer beware, though &mdash; there are reproductions out there. Those are usually rustier, have fainter markings on the bottom, and are heavier than the real deal. These are a good thing to look for at garage sales to later resell. A 3&quot; skillet with a lid can bring in about $150.</p> <h2>7. Tin Products</h2> <p>Look for tin cups, scoops, graters, and containers to sell. While some may have a low resale value ($5), an old coffee tin may earn you about $20. You can put together several tin items and resell in a lot.</p> <h2>8. Dish Sets</h2> <p>Inherit a set of dishes you don't really love? You're not alone. My grandmother's Franciscan &quot;Apple&quot; pattern languishes in our attic. And if you don't want to pass them down to your kids, consider selling the set. Fill waffles with your favorite ice cream before slicing into individual portions. Top with an irresistible berry compote. Eat immediately.</p> <h2>6. Brownies</h2> <p>Or <a href="http://www.foodnetwork.com/recipes/waffle-brownies.html">use brownie mix</a> in your waffle maker &mdash; it bakes in just five minutes. After your iron is preheated, add two tablespoons to a quarter cup of batter. Then top with ice cream or whatever else sounds good.</p> <h2>7. Cookies</h2> <p>These <a href="http://www.recipe.com/oatmeal-chocolate-chip-waffle-cookies/">oatmeal chocolate chip cookies</a> are sort of like the Italian pizzelles, only bigger and much better. Simply mix together your ingredients, scoop into your greased waffle maker, and wait around three minutes for them to bake.</p> <h2>8. Grilled Cheese</h2> <p>If you love grilled cheese as much as I do, prepare to be amazed. This <a href="http://ifood.tv/sandwich/507215-waffle-iron-grilled-cheese-sandwich">waffle iron grilled cheese</a> recipe is so simple, yet way more satisfying than standard fare. Butter one side each of two bread slices, arrange the first on the grill and top with cheese. Top with the second and cook. The result is oozy and gooey, yet with some crispy nooks and crannies.</p> <h2>9. Quesadilla</h2> <p>Here's another breakfast just begging to be tried: <a href="http://realfoodbydad.com/waffled-breakfast-quesadillas/">waffle quesadillas</a>! Cook up some scrambled eggs, then assemble them &mdash; along with cheese and other toppings &mdash; onto a flour tortilla. Cook in your waffle maker until crispy.</p> <h2>10. Mashed Potatoes</h2> <p>These <a href="http://joythebaker.com/2013/09/mashed-potato-cheddar-and-chive-waffles/">mashed potato waffles</a> equal game day food at its finest. You'll make a delicious potato mix, then add a bit of flour before cooking in the waffle maker. Top with some cheese and broil for the ultimate finish.</p> <h2>11. Tofu</h2> <p>Frying tofu takes a while, right? So, try <a href="http://www.seriouseats.com/recipes/2014/12/waffled-crispy-tofu-miso-sesame-sticky-rice-recipe.html">&quot;waffling&quot; tofu</a> in your waffle maker! You'll want to start by draining tofu using paper towels. Then coat uncooked tofu in a light sesame-miso dressing before placing on the iron and closing the top to cook for around three minutes. Don't forget to spritz your machine with cooking oil.</p> <h2>12. Biscuits</h2> <p>I developed my own favorite <a href="http://www.neverhomemaker.com/2014/12/biscuit-waffles-two-ways.html">waffle biscuit</a> recipe recently. I enjoy the resulting biscuit as a side with dinner &mdash; it goes wonderfully with soups and stews. I also love it as a base for a gravy and egg-topped brunch dish and even a melt-in-your-mouth pizza recipe.</p> <h2>13. Calzones</h2> <p>Leave it to Rachael Ray to create the &quot;<a href="http://www.rachaelrayshow.com/recipe/13931_Wa_Zone_Waffle_Calzones/">Wa-Zone</a>,&quot; a waffle calzone you probably never imagined until this very moment. The method is the same you'd follow for making a traditional calzone, but then you put it in your waffle maker. Just don't shut the top too tight.</p> <h2>14. Mac and Cheese</h2> <p>One of the best comfort meals is macaroni and cheese, and the geniuses at Serious Eats have made&nbsp;<a href="http://www.seriouseats.com/2014/04/how-to-make-macaroni-and-cheese-waffles.html">waffle mac and cheese</a>. Not only that, they've attempted this dish in two different ways. I definitely prefer the mac and cheese sandwich, which is basically a grilled cheese with macaroni as the bread run through the waffle maker.</p> <h2>15. Hash Browns</h2> <p>I've come across many recipes for <a href="http://www.thinkarete.com/waffle-iron-hashbrowns/">waffled hash browns</a>, but this one wins for its ease and simplicity. Thaw a bag of frozen tater tots and place them on your (well oiled) waffle maker. You may also find yourself agreeing with me when I say I think the &quot;As Seen on TV&quot; ads are really over-the-top and pretty corny. However, once in a while, darned if you don't see a commercial and wonder&hellip; &quot;Hmm, does that really work?&quot; If you fit this criteria, read on.</p> <h2>1. Stone Wave</h2> <p>I feel like I am back in 1978 every time I use the <a href="http://www.amazon.com/gp/product/B00HM9B8V2/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00HM9B8V2&amp;linkCode=as2&amp;tag=wisbre03-20&amp;linkId=BF6QFY447A5XZG4V">Stone Wave</a>, and I am fairly certain that at one point we owned a set of mugs and matching bean pot. Its shape reminds me of a tagine, though, and 32 million Moroccans can't be wrong. A tagine is a ceramic, conical cooking pot. When you cook with a tagine, the steam rises, then condenses, making the food inside very moist. The Stone Wave, also ceramic, mimics a tagine's conical shape. I really like how quickly it cooks foods. I also don't have to babysit things on the stove. It all goes into the 'Wave, I microwave it, and eat.</p> <h3>Favorite Uses</h3> <p>My favorite things to make in the Stone Wave are omelets, <em>healthy</em> eggplant parmesan, and chocolate souffles. I sometimes use egg substitute for the omelets, plop them onto a whole-wheat English muffin, and add avocado. That is a healthy start to my day. The little recipe book (included) has several good ideas, including an apple crisp and a healthier version of a &quot;bloomin'&quot; baked onion. Clean-up is easy. I always use a little canola or olive-oil spray before adding the ingredients.</p> <h3>Cons</h3> <p>It does cook a smaller quantity. We're a family of two now, so we just split a lot of things, like the recipe booklet's chocolate souffle, or a 'Wave of eggplant parmesan (great appetizer). Because we eat breakfast at different times, we just share ours. They are also available in sets of four, if you felt so inclined (but I'm not sure how well four of them would microwave at once). The handle can be hot when you remove from the microwave, so I usually use a potholder or the Ove Glove (see below).</p> <p><iframe width="605" height="340" frameborder="0" src="//www.youtube.com/embed/D6BEdUh8JA4" allowfullscreen=""></iframe></p> <h2>2. Ove Glove Hot Surface Handler</h2> <p>Pretty long name for &quot;potholder&quot; or &quot;oven mitt,&quot; eh? I imagine the inventor had some good reason for that, but I have yet to say, &quot;Hey, honey, can you please hand me my <a href="http://www.amazon.com/gp/product/B001EPR98Q/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B001EPR98Q&amp;linkCode=as2&amp;tag=wisbre03-20&amp;linkId=5YZ5INESLCD2YLMQ">Ove Glove Hot Surface Handler</a>?&quot; It looks like a knitted glove, but it is made of Kevlar and Nomex with silicone grips. Why use an Ove Glove instead of your basic oven mitt? Well, your basic oven mitt is not constructed from Kevlar. This sucker withstands serious heat. Like, 540-degree heat. It has been tested by <a href="http://www.consumerreports.org/cro/magazine-archive/2010/july/shopping/ove-glove/overview/index.htm">Consumer Reports</a>, and this product definitely works. I have also washed it numerous times and the surface is still fine, after two years of use.</p> <h3>Favorite Uses</h3> <p>My husband really likes using the Ove Glove for outdoor grilling, where it is handy for moving skewers around. He can just reach in and grab them (try that with tongs). I like its sticky grip when I manhandle casserole dishes in the oven.</p> <h3>Cons</h3> <p>I do have an issue with the product, albeit a stupid one. Every time I use it, I expect to get burned. In my head, I guess I still think it's a mitten-type thing, and it makes me hesitant when I touch cookie sheets or casserole dishes. I have <em>never</em> been burned while using it, so I recognize this as irrational (and kind of silly).</p> <p><iframe width="605" height="340" frameborder="0" allowfullscreen="" src="//www.youtube.com/embed/ifxVc__vmb8"></iframe></p> <h2>3. Perfect Brownie Pan Set</h2> <p>This product wins the award for &quot;Most Appropriately-Named Gadget of the Year.&quot; I actually heard someone in my office say, &quot;How do you get your brownies to look so perfect?&quot; Well, folks, you buy the <a href="http://www.amazon.com/gp/product/B002MR0IUG/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B002MR0IUG&amp;linkCode=as2&amp;tag=wisbre03-20&amp;linkId=4ZWZP4PYDK4V52B2">Perfect Brownie Pan Set</a>, that's how. The set has several components: The pan itself, a nonstick sheet, a divider grid that goes over the brownie batter, and a rack. What it does is to enable you to get your brownies to come out in 18 even squares. For me, this never happens using a knife. I always have the few weird, misshapen pieces, and a lot of crumbs. It makes presentable brownies, not ones you're embarrassed to take to a potluck.</p> <h3>Favorite Uses</h3> <p>Brownies, naturally, followed by corn bread and quiche squares. You can even make macaroni-and-cheese &quot;squares.&quot;</p> <h3>Cons</h3> <p>Use a generous amount of vegetable spray, or you'll have a devil of a time washing it. If your batter is a thin, it may leak a little. For this product, you really need to follow the manufacturer's directions, like preheating the pan. One of my friends just uses the divider grid to cut pans of things, instead of using a knife. I guess that works, too!</p> <p><iframe width="605" height="340" frameborder="0" src="//www.youtube.com/embed/6FSOKnW9BLI" allowfullscreen=""></iframe></p> <h2>4. Perfect Tortilla Pan Set</h2> <p>Being a big lover of taco salads, the <a href="http://www.amazon.com/gp/product/B008UA4POE/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B008UA4POE&amp;linkCode=as2&amp;tag=wisbre03-20&amp;linkId=FDSNMZNVMMSA5R2V">Perfect Tortilla Pan Set</a> caught my attention immediately when I saw the commercial on TV. The Perfect Tortilla Pans are aluminum bowls &mdash; well, more like big cups &mdash; into which you put a tortilla. The edges of the pans are curved, giving the bowls a restaurant-like presentation. You then bake the tortillas and fill with whatever you like.</p> <h3>Favorite Uses</h3> <p>I like to make tortilla cups consisting of layers of beans, rice, lettuce, tomatoes, and avocados. They also make great bowls for chili. You can make a dessert, using flour tortillas and cinnamon, and add ice cream and bananas. Or, try taking chocolate-chip cookie dough, moulding it to the bowls, and baking for dessert bowls. Wow! After a little experimentation, I found that I could use whole-wheat tortillas by increasing the oven heat a little and baking for a bit longer. The aluminum, nonstick pans clean very easily and they are not a storage problem.</p> <h3>Cons</h3> <p>I read a negative review of the pans, saying that you could simply turn a cupcake pan upside-down and position tortillas between the cups. Well, I tried it, and it did indeed work. However, they did not look nearly as nice, in my opinion, without the fluted edges, and it was difficult to get the tortillas to stay put.</p> <p><iframe width="605" height="340" frameborder="0" src="//www.youtube.com/embed/3xtNVxihFmE" allowfullscreen=""></iframe></p> <h2>5. Veggetti Spiral Vegetable Cutter</h2> <p>I had seen other versions of this product and, in fact, had one of them in my Amazon shopping cart. I just hadn't gotten around to finishing up the order, and how fortunate that was. The <a href="http://www.amazon.com/gp/product/B00IIVRB3W/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B00IIVRB3W&amp;linkCode=as2&amp;tag=wisbre03-20&amp;linkId=G7F37YX6OHKOD5SM">Veggetti Spiral Vegetable Cutter</a> does the job of the more expensive version! This nifty cutter enables you to cut vegetables (zucchini, Japanese eggplant, carrots, etc.) into fun, attractive spiral shapes. I tried to buy another as a gift, but the recipient had already purchased his own.</p> <h3>Favorite Uses</h3> <p>I love zucchini strands made into &quot;pasta,&quot; with a sauce, or sauteed in olive oil with seasonings. You can make fun salads with carrots and cucumbers. It also makes a really neat-looking &quot;base&quot; upon which to put grilled fish, chicken, etc. I think kids would love the fun food shapes (but it's too sharp for them to use, so watch that).</p> <h3>Cons</h3> <p>You'll want to clean, or at least rinse, this product right away. I find it similar to a box grater in that once the bits of food have dried on the inside, it's tough to get it clean. I found a long-handed skinny brush that is perfect; a toothbrush would probably also work. Rinsing right after use helps tremendously.</p> <p><iframe width="605" height="340" frameborder="0" src="//www.youtube.com/embed/ApQJaC6S-RA" allowfullscreen=""></iframe></p> <h2>6. Salad Blaster</h2> <p>I first saw kids and college students toting these <a href="http://www.amazon.com/gp/product/B0000XMR3K/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000XMR3K&amp;linkCode=as2&amp;tag=wisbre03-20&amp;linkId=UBE4G2G4QSS552VI">Salad Blasters</a>, and then realized how great they would be for the office. The Blaster is basically a large cup with a built-in holder for dressing. When you are ready to eat, you release the dressing, and shake. Mine fits in my car cup-holder, and in the door of the office refrigerator. They are a handy size.</p> <h3>Favorite Uses</h3> <p>They work very well for salad, as intended, but I really like mine for fruit. I like to cut up melon into small cubes, and put it into the container. Going without dressing is fine, of course, for fruit, but if I have time, it's really delicious if you mix some honey and fresh-squeezed lime, and put that into the dressing holder. It also works for leftover pasta or potatoes - just throw some dressing into the dressing section, and you have instant pasta or potato salad for lunch. I have even made taco salad, using leftover hamburger and adding tortilla chips later.</p> <h3>Cons</h3> <p>When you shake the container, make sure you are holding the lid. Also, creamier dressings work better in the dressing container than a vinaigrette, which does tend to leak a little. That's not a huge problem, though. You do need to start stockpiling plastic forks. I keep a stack at my desk. Sure, you can tote salad in a regular plastic container, but just having that built-in dressing compartment makes it a lot more convenient.</p> <p>The next time you see one of these commercials and wonder if the products really work, or if they are worth the money, they just might be!</p> <p><em>Have you ever purchased a TV kitchen gadget? Over the years I've experimented with a variety of materials for different methods, recipes, and cooking styles. I've certainly learned a lot about what material works best for what purpose, but it's taken a lot of trial and error. (See also: <a href="http://www.wisebread.com/5-kitchen-luxuries-that-are-worth-it-and-5-that-arent?ref=seealso">5 Kitchen Luxuries That Are Worth It</a>)</p> <p>Today I'm sharing the basics on some of the world's most popular cookware materials and why they're absolutely great or, sometimes, not. In a follow-up, I'll be providing a list of my specific favorite pans, pots, and baking dishes for those of you who'd rather skip the pre-boxed cooking sets and get right down to business.</p> <h2>Aluminum</h2> <p>If you're looking for a low-cost way to cook your foods, aluminum might work for you. These pots and pans are lightweight and excellent at conducting heat. They can last a long time, too, if cared for properly, but you'll need to baby them. (See also: <a href="http://www.wisebread.com/another-36-uses-for-tin-foil?ref=seealso">36 Ways to Use Tin Foil</a>)</p> <p>Unfortunately, aluminum can warp, dent, and scratch relatively easily. And without any special coating (which I'll get to in the Nonstick section below), your more acidic ingredients can react with the raw metal and compromise your investment. Some have even expressed health concerns with regard to using aluminum, although others believe there's <a href="http://www.psychologytoday.com/blog/your-brain-food/201105/keep-the-aluminum-cookware-your-brain-won-t-mind">nothing to worry about</a>.</p> <p>But if you're still worried about the risk, the Cook's Illustrated lab cooked tomato sauce for two hours inside aluminum pots. They then stored it in the same pot overnight. When tested, the sauce contained just .0024 milligrams of aluminum per cup versus the <a href="http://www.takepart.com/article/2013/05/15/aluminum-pans-wont-give-you-alzheimers">200 milligrams found</a> in a single antacid tablet.</p> <h2>Cast Iron</h2> <p>Over the years, I have grown very fond of cast iron &mdash; both enamel coated and not &mdash; for cooking and especially for baking breads. These pots and dishes can last a lifetime if cared for properly. They even entail a few health benefits from use. For example, vegetarians and vegans might like to know that cooking with cast iron <a href="http://www.eatingwell.com/healthy_cooking/healthy_cooking_101_basics_and_techniques/3_health_reasons_to_cook_with_cast_iron?page=4">fortifies food with iron</a>. As well, cast iron can be an affordable option if you look beyond the popular brands and stick with the basics.</p> <p>On the flip side, cast iron is awfully heavy. The handles get very hot and, from experience, it's easy to forget and burn your hands while cooking (Ouch!). And if you're using cast iron without enamel, you'll need to avoid acidic foods because it will react negatively and damage your pans. If you're new to this material, you'll also need to <a href="http://www.lodgemfg.com/useandcare/seasoned-cast-iron">season your cookware</a> from time to time and take care with cleaning to avoid rust.</p> <p>I like cooking tofu on cast iron pans because it gives me that extra dose of iron I need in my diet. Otherwise, I use my cast iron pans for hearty cooking and <a href="http://www.neverhomemaker.com/2013/01/beautiful-sourdough-bread.html">bread baking</a>. I tend to shy away when cooking eggs because I have yet to master the technique. However, I've heard you can really cook most anything provided your pans are seasoned properly.</p> <h2>Copper</h2> <p>I don't own any copper cookware, but I surely have lusted over some pretty pieces I've spied in the &quot;Downton Abbey&quot; kitchen. I was pleasantly surprised to learn that copper, by nature, is antimicrobial because it contains <a href="http://www.thekitchn.com/naturally-antimicrobial-copper-135996">many brasses</a>. A friend of mine who uses copper tells me she's smitten because it's a great conductor of heat. Her foods cook uniformly, and her pans are responsive to heat changes as she changes levels on her cooktop.
