Sure, you can buy burgers in the freezer section of your local grocery store &mdash; but have you seen their ingredients lists? Plus, homemade just tastes better. In fact, my husband and I enjoy our homemade burgers so much, we go out to eat far less often these days, saving us tons of money. Most recipes should respond well to this technique: Shape into patties, lay out on a cookie sheet, and freeze. Then transfer into airtight plastic bags and eat within six months (or longer, depending on your freezer and storage). To serve, let defrost for an hour or so, then cook on your stovetop over medium-high heat until golden on both sides and warm in the center.</p> <p>Now, on to the recipes!</p> <h2>1. Zucchini Black Bean Burgers</h2> <p>These <a href="http://www.girlmakesfood.com/zucchini-and-black-bean-vegan-veggie-burgers/">Zucchini and Black Bean Burgers</a> are a wonderful source of phytonutrients and antioxidants. They also come together in a snap. Just combine shredded zucchini with a can of drained black beans and some flax meal. Season however you like, then form patties, and cook on your stovetop.</p> <h2>2. Quinoa White Bean Burgers</h2> <p>I love finding new ways to eat quinoa, so these <a href="http://thesimpleveganista.blogspot.com/2013/08/quinoa-white-bean-veggie-burgers.html">Quinoa and White Bean Burgers</a> are certainly on my to-try list. The author of this recipe shares that you can fry or bake them, and if you don't have all the ingredients on the list &mdash; just substitute in like things. For example, frozen corn could be swapped with frozen peas.</p> <h2>3. Chickpea Burgers</h2> <p>I created these <a href="http://www.neverhomemaker.com/2010/04/chickpea-burgers.html">Chickpea Burgers</a> when I discovered I was out of all other types of beans one night. Use two cans of beans with some chopped onion and chili pepper and bulk up using oats and flax meal. You can season however you like, but I recommend cumin and a dash of cayenne pepper.</p> <h2>4. Eggplant Burgers</h2> <p>These vegan <a href="http://thetolerantvegan.com/2011/08/baked-eggplant-burgers/">Baked Eggplant Burgers</a> contain some unexpected ingredients. Hummus makes the list along with pine nuts. In other words: Uniquely delicious! To continue on this theme, top burgers with tahini versus standard ketchup and mustard.</p> <h2>5. Beet Burgers</h2> <p>Shock your vegetarian and vegan friends by serving blood-red <a href="http://www.neverhomemaker.com/2013/02/we-heart-beet-burgers.html">Beet Burgers</a> at your next dinner party. Along with the amazingly vibrant color and delicious earthy-sweet flavor, they contain a good dose of potassium, magnesium, and vitamins A, B, and C.</p> <h2>6. Cauliflower Burgers</h2> <p>These Paleo-friendly <a href="http://blommi.com/paleo-veggie-burgers-gluten-free/?_szp=256279">Cauliflower and Carrot Burgers</a> bind together using protein-rich eggs. They are also gluten-free, grain-free, and and legume-free if you have special dietary restrictions. Oh, and if you have a nut allergy, you can also swap in sunflower kernels for the walnuts.</p> <h2>7. Tofu Burgers</h2> <p>I used to live two blocks from the famed Moosewood Restaurant in Ithaca, NY. So, when I found their <a href="https://www.yahoo.com/food/moosewoods-classic-tofu-burgers-86419421887.html">Classic Tofu Burger</a> recipe online, I knew it had to make this list. The mix creates eight good-sized burgers, but you can also choose to shape into faux &quot;meatballs&quot; and serve with spaghetti.</p> <h2>8. Cheese-Stuffed Burgers</h2> <p>I once saw an episode of <em>Man V. Food</em> where host Adam Richman explored the incredible Juicy Lucy, a stuffed cheeseburger native to Minneapolis, MN. It looked crazy good, so I just had to replicate it at home. And the <a href="http://www.neverhomemaker.com/2010/02/oh-so-vegetarian-juicy-lucy.html">Vegetarian Juicy Lucy</a> was born. I recommend serving this burger on sourdough buns atop a bed of sweet potato fries.</p> <h2>9. Copycat Sunshine Burgers</h2> <p>Do you like Sunshine Burgers? So do I! Here's a wonderful <a href="http://thefitchen.com/2013/07/25/sunshine-veggie-burgers/">copycat recipe</a> that is just as tasty, yet less expensive. All you need are sunflower kernels, brown rice, carrots, and garlic cloves. Like the original, these veggie burgers are crispy on the outside and soft on the inside.</p> <h2>10. Sweet Potato Burgers</h2> <p>Think sweet potato fries go on the side? Think again! These <a href="http://www.howsweeteats.com/2012/09/smoky-sweet-potato-burgers-with-roasted-garlic-cream-and-avocado/">Smoky Sweet Potato Burgers</a> have so many flavors and textures going on. Use your microwave to quickly cook potatoes in their skins before mashing coarsely. You also need an interesting array of quality spices and toppings. You need an artistic bent, and a flair for sauces can't hurt. But what is the secret to creating the John Q. Public Burger Extreme, the Biggest, Baddest, Most Brazen Burger of All Time, the Most Transcendent, Blue-Ribbon Ground-Breaking, Ground Beef, Mouth-Watering, Hand-Held Chuck Nugget?</p> <p>Here is what you need to put it all together</p> <h2>A Recipe</h2> <p>Here are some links that will put some <a href="http://www.foodandwine.com/slideshows/10-favorite-burger-recipes">gourmet restaurant recipes</a> at your fingertips, as well as some <a href="http://bbq.about.com/od/hamburgerrecipes/tp/10hamburgers.htm">mid-range recipes</a> and some <a href="http://www.recipelion.com/Beef-Recipes/23-Great-Hamburger-Recipes-to-Try-Right-Now/ct/1">simpler recipes</a> for those without the inclination to go all out. That said, before you start swinging for the fences, here's what you should know about what all the great restaurant hamburgers have in common.</p> <h2>Transcendent Beef</h2> <p>Not just great beef &mdash; transcendent beef. You need <a href="http://aht.seriouseats.com/archives/2009/10/the-burger-lab-best-burger-blend-profiles-of-eight-cuts-of-beef.html">customized ground beef</a>. The greatest restaurants don't settle for ground up filet mignon, as terrific as that sounds. The top chefs aim for beef blends, such as &quot;equal parts short rib and brisket with 20% fat.&quot; You need to elevate your game to make it in the burger big leagues. In the link above it's:</p> <ul> <li>6 oz sirloin</li> <li>5 oz brisket</li> <li>12 oz oxtail (which produces 5 oz of lean and fat)</li> </ul> <p>All of which is ground at home, either in a food processor or the grinder attachment on your mixer. Can't grind it at home? Ask the butcher to do it, instead. And if oxtail is too much trouble, use boneless short rib.</p> <h2>Shape and Cook</h2> <p>Shape your patties by hand, and don't press and compact too firmly. In fact, you want to shape your patties gently. The fat in the beef needs room to roam. Whether to grill outside or fry in the skillet inside is up to you and the weather. The trick to avoiding sticking and messiness is not to fuss with your patties while heat and chemistry are at work. When they're ready, they'll release from grill or skillet with a gentle nudge.</p> <h2>Nose Clips and Cheese</h2> <p>We're talking <a href="http://www.mnn.com/food/healthy-eating/stories/17-top-stinky-cheeses">stinky cheese</a>: Stilton, Gruyere, Roquefort, Blue Cheese, Brie, Camembert, Feta. This can be folded into the patty, sculpted into the center, or used as a topping. But suffice it to say, if you suggest sliced American cheese at Gourmet Burger School, they make you run around the building three times without any clothes and then they don't let you back in. Meanwhile, remember that stinky cheese works like a condiment and a spice, so teasing out the right proportions is essential.</p> <h2>Taking Time</h2> <p>Many well-appreciated cooks can slap together an edible hamburgers in 20 minutes. And that includes shopping. Not so at the <a href="http://www.foodandwine.com/recipes/bacon-burgers-on-brioche-buns">Tyler Florence Wayfare Tavern Le Grand</a>, which requires a custom blend of ground prime rib, brisket, skirt steak, and tenderloin; Nueske's applewood smoked bacon; and Cowgirl Creamery's triple-cream Mt. Tam cheese. Estimated time to cook is reasonable, but it will take half a day to shop for the right cheese, beef, and spices.</p> <h2>Great Buns</h2> <p>Here's the one ingredient many restaurant-quality recipes agree on: Brioche burger buns. These are firm, delicious buns that can control even the most challenging burgers. They can also be made at home if you are looking for a <a href="http://shesimmers.com/2009/05/how-to-make-brioche-hamburger-buns.html">fresh brioche</a> roll that will wow the audience.</p> <h2>Only the Best Toppings</h2> <p>A friend of mine drives to a larger town, 20 minutes away, where she makes three stops just to get the stuff to make a chicken sandwich. Or, should I say, a life-altering chicken sandwich. So, when a gourmet burger recipe calls for applewood smoked bacon, a true foodie will go to the ends of the earth and back again to find what the recipe calls for. (And teaching a pig to smoke isn't easy, either.) Be willing to go the extra mile. That's what good chefs do.</p> <p>You can go all kinds of directions here. Caramelized onions. Sauteed mushrooms. Ortega chiles. Foie gras. But classics are classic for a reason: a leaf of crisp iceberg lettuce, a thick slice of beefsteak tomato, and a few rounds of thinly sliced red onion are all worthwhile. Some <a href="http://aht.seriouseats.com/archives/2012/08/great-sauces-toppings-recipes-for-burgers-classic-mayo-wacky.html">burger sauces</a> are for men with calluses on their tongues. Sauces for burgers range from subtle to creamy to flaming hot, but when you're talking baconnaise or shake shack spread, we're talking unapologetic, lip-smacking vegan repellant.</p> <p>Let's narrow it down to the basic, sort of thousand island dressing &quot;secret sauce&quot; you might get at a hurry-up burger joint. The recipe's pretty easy: two parts mayo to one part ketchup. About a half-part sweet pickle relish and dashes each of vinegar and sugar to taste.</p> <h2>Don't Go It Alone</h2> <p>Ground beef scraped off a skillet or a grill is party food. Don't cook one alone. Don't eat one alone. Great company is the one absolute, irreversible ingredient for a terrific burger. The phone should be ringing. It helps if there are dogs underfoot and kids dashing around, working up an appetite. There should be potables poured and nothing much fancier than blue jeans allowed. Save the good wine for later. We do in my family, but I felt like we were getting into a rut with the old patty, sauce, lettuce, cheese, and pickle combo. I recently spent a couple of weeks inventing and trying out new combos. Here are some new and creative ways to make and top your burgers. (See also: <a href="http://www.wisebread.com/great-vegan-grill-recipes">Great Vegan Grill Recipes</a>)</p> <h2>1. Apple and Turkey Burger</h2> <p>For the burgers themselves, combine <a href="http://www.wisebread.com/10-tasty-ideas-for-leftover-turkey">ground turkey</a>, one egg, and a quarter of a tart apple, diced. Form into patties and fry in olive oil.</p> <p>While the burgers are frying, make the topping. Thinly slice half a tart apple and sauté in olive oil, along with half of a yellow onion, also thinly sliced. When the apples and onion are tender, set aside.</p> <p>Toast buns.</p> <p>When your burgers are cooked through, place them on the bottom halves of buns and top with the apple-onion mixture, a tablespoon of Gorgonzola cheese, and a generous tablespoon of barbeque sauce. Add lettuce and the top bun.</p> <p>Red potato home fries didn&rsquo;t make the photo shoot, but they go perfectly.</p> <p><img height="454" border="0" width="605" src="http://wisebread.killeracesmedia.netdna-cdn.com/files/fruganomics/u805/DSCN0157.JPG" alt="http://www.wisebread.com/files/fruganomics/u805/DSCN0157.JPG" v:shapes="Picture_x0020_16" /></p> <h2>2. Bacon Bleu Burger</h2> <p>These are just...well, they're decadent.</p> <p>To make two burgers, take &frac34; of a pound of ground beef, add &frac14; cup of crumbled bleu cheese; &frac12; onion, finely chopped; and a shake of Tabasco sauce. I think these are best barbequed, but you can also fry them. Wait, it gets better.</p> <p>Fry four slices of bacon. While the bacon is frying, toast buns. When your burgers are done, top with two bacon strips, mayo, lettuce, and a slice of tomato. Cry because it&rsquo;s so good. Coleslaw is nice with these.</p> <h2>3. Sophisticated 'Shroom Topping</h2> <p>I know it&rsquo;s silly, but when I saute leeks and mushrooms with a little sherry, I feel fancy. If you spoon that over a hamburger and add a little grated Emmental or Swiss cheese on top, you&rsquo;ll feel that way, too.</p> <h2>4. Hola Burger</h2> <p>If you like spicy, well, try this Mexican-inspired masterpiece.</p> <p>To make two burgers, take &frac34; of a pound of ground beef, add a teaspoon of cumin and two shakes of Tabasco sauce. When the burgers are just about done, cover them with a slice of pepperjack cheese. But wait!</p> <p>Drain a can of diced chili peppers (I like mild) and sprinkle on the burger, along with sliced tomato, and crispy romaine. Serve with curly seasoned fries and beer.</p> <h2>5. Peanut Burger</h2> <p>I could eat peanut sauce on just about anything &mdash; I like it that much. Top your burger with a couple of spoonfuls, some chopped green onions, and shredded iceberg lettuce. Serve with home-made sweet potato fries.</p> <h2>6. Not Your Basic Black Bean Burger</h2> <p>This is a <a href="http://allrecipes.com/recipe/homemade-black-bean-veggie-burgers/">good basic black bean burger recipe</a>, with a somewhat fancier way to top them &mdash; corn coulis.</p> <p>Cook two ears of corn, and slice off the corn when tender.</p> <p>In a saucepan, saute &frac12; of a minced shallot and &frac12; teaspoon of garlic in two tablespoons of butter until the shallot is translucent.</p> <p>Add the corn, &frac14; cup of cream, &frac14; teaspoon of cumin and stir until coated.</p> <p>Put this all into a food processor and just pulse lightly &mdash; you want to see chopped corn, not pulverized corn &mdash; and spoon over burgers. Chopped, drained tomatoes look pretty on the top. Serve on toasted French bread, open-faced. Tossed green salad rounds things out.</p> <h2>7. Asian Salmon Burger</h2> <p>Let&rsquo;s start with the burgers.</p> <p>Drain and flake one <a href="http://www.wisebread.com/cool-ideas-for-canned-salmon">can of salmon</a>, and add an egg, &frac14; cup panko crumbs, 1 teaspoon of sesame oil, and 1 teaspoon of soy sauce (shoyu). Form into two burgers and fry.</p> <p>We&rsquo;re going to top these with Sriracha mayonnaise (add three drops of Sriracha to two heaping tablespoons of mayonnaise, and stir. Taste; add more Sriracha as desired).</p> <p>Add radish sprouts, sliced avocado, tomato, and nori. What? Yes, nori, like you use for sushi. Cut a piece in half, then in strips. I like these served on toasted French bread. A red-cabbage slaw on the side would be nice, too.</p> <p><img height="454" border="0" width="605" src="http://wisebread.killeracesmedia.netdna-cdn.com/files/fruganomics/u805/DSCN0150.JPG" alt="http://www.wisebread.com/files/fruganomics/u805/DSCN0150.JPG" v:shapes="Picture_x0020_17" /></p> <h2>8. Crab Burger</h2> <p>Crabby, Patty? Naah, these make me happy.</p> <p>For the burgers&nbsp;&mdash; drain and flake one can of crab. Add an egg, &frac12; cup panko crumbs, two shakes of Tabasco sauce, one green onion, minced, and one tablespoon of mayonnaise.</p> <p>Fry burgers and buns; top with this divine <a href="http://www.simplyrecipes.com/recipes/remoulade_sauce/">remoulade sauce</a>. These are very rich, so sliced tomatoes on the side are enough.</p> <h2>9. Italian-American Burger</h2> <p>I used ground turkey; beef will also work fine.</p> <p>Add an egg to the meat, along with &frac14; cup of Italian bread crumbs, two tablespoons of grated parmesan, &frac34; teaspoon of fennel, 1 teaspoon of oregano, and a teaspoon of garlic salt. Mix and shape into burgers.</p> <p>Fry burgers and toast bread.</p> <p>Top with pesto, spaghetti sauce, mozzarella cheese, and spinach leaves.</p> <p><img height="454" border="0" width="605" src="http://wisebread.killeracesmedia.netdna-cdn.com/files/fruganomics/u805/DSCN0153.JPG" alt="http://www.wisebread.com/files/fruganomics/u805/DSCN0153.JPG" v:shapes="Picture_x0020_18" /></p> <h2>10. I also like a roasted red pepper (from a jar) in that mix. It&rsquo;s so easy! Baby carrots go well with this, as a side.</p> <h2>11. Polynesian Burger</h2> <p>To &frac34; of a pound of meat, add &frac12; can of crushed pineapple, drained, and &frac14; cup of panko crumbs. Cook burger as usual. Top with slices of Maui onion. Serve on Hawaiian sweet bread rolls. <em>Ono</em>.</p> <h2>12. Kimchee Burger</h2> <p>I know, it sounds odd &mdash; but these are big hit here at my town&rsquo;s Little League ballpark. Dijon-Mushroom Topping</h2> <p>This is a really good topping on turkey burgers because they can sometimes be dry.</p> <p>Saute <a href="http://www.wisebread.com/foraging-for-food-the-hunt-for-the-wild-mushroom">mushrooms</a> in a little olive oil. When tender, add a teaspoon of Dijon mustard and a teaspoon of sour cream. Stir; spoon over burgers, and serve on toasted onion rolls. Green salad on the side cleans the palate for another bite.</p> <h2>14. Poor Man&rsquo;s Filet Mignon Burger</h2> <p>If you close your eyes, and use your imagination, my husband says&hellip; you can kind of get it. Whatever &mdash; they are really good. I go <a href="http://www.cruelironing.com/1/post/2013/03/poor-mans-filet-mignon.html">bun-less with these babies</a>, but you could certainly put them in a bun, if you wanted. I like to shake on just a little more Worcestershire before serving. &nbsp;</p> <h2>15. Western Burger</h2> <p>This is one of my mother&rsquo;s standbys and still a winner.</p> <p>Heat a can of drained kidney beans with some barbeque sauce and bacon bits. Spoon over beef burgers and top with a slice of American cheese. I think that tater tots are the perfect side dish.</p> <p>Note: Always make sure <a href="http://www.foodsafety.gov/keep/charts/mintemp.html">you cook meat to safe temperatures</a>.</p> <p><em>Have you tried any interesting variations on the classic burger?
