Although I don't mind cooking and I'm not bad at it, I just usually think of 100 other ways I could spend my time and end up <a href="http://www.wisebread.com/10-sandwiches-hearty-enough-for-dinner">eating a sandwich</a> or cooking a frozen meal. But through the years, I've discovered some recipes I love that are either easy or quick, and they have plenty of portions for later.</p> <h2>1. Skillet Chicken Enchiladas</h2> <p>These <a href="http://recipes.bushbeans.com/recipe/216436/skillet-chicken-enchiladas.aspx">chicken enchiladas</a> require minimal effort besides chopping a few veggies. I used to buy fresh garlic and chop it, but in the past year, I've bought the pre-chopped jar from the grocery store. It's easier to use and it doesn't spoil as quickly. Another option is to replace fresh vegetables with Rotel (if you're in a hurry).</p> <h2>2. 15-Minute Chicken Chili</h2> <p>My roommate makes chili at least once a week and puts it into separate containers for work lunches. Even more impressive? Her chili only takes about 30 minutes to cook and is pretty simple. While this <a href="http://www.kraftrecipes.com/recipes/15-minute-chicken-chili-121400.aspx">chicken chili recipe</a> isn't hers, it's close enough and only takes 15 minutes (as long as you've pre-cooked your chicken)! Add fresh vegetables and switch out the chicken with beans or tofu, and you have an even healthier option!</p> <h2>3. Swiss Chard Egg Bake</h2> <p>Swiss chard is in season and is a wonderfully healthy alternative to grains. I stumbled upon this Whole Foods' recipe for an <a href="http://www.wholefoodsmarket.com/recipe/parmigiano-reggiano-baked-eggs-swiss-chard">egg bake with Swiss chard</a> when I Googled the ingredients in my fridge last year. I made a couple changes &mdash; adding bacon to the mix and less cheese (again, based on what I had in my fridge). Serve with whole grain toast and you have a fun take on breakfast for dinner.</p> <h2>4. Chicken Tacos</h2> <p>I recently hosted a party at my house and slow cooked meats all day. Everyone's favorite was this <a href="http://www.food.com/recipe/crock-pot-chicken-taco-meat-4957">shredded chicken taco meat recipe</a>, which was the easiest thing I've ever made. There's a <a href="http://www.twohealthykitchens.com/2014/01/08/3-ingredient-crock-pot-chicken-tacos/">different variation</a> from Two Healthy Kitchens that uses salsa instead of chicken broth, but it's really up to you! While the title of this article suggests &quot;quick,&quot; don't forget the Crock-Pot was invented for lazy people. You just throw everything together, leave, and come home to a meal. Add sour cream, fresh salsa, guacamole, fresh veggies, and cheese, and you've got delicious tacos for dinner!</p> <h2>5. Goat Cheese and Zucchini Frittata</h2> <p>A cast iron skillet should be as much a part of your kitchen as a slow cooker, especially if you're lazy. Frittatas are the easiest dish to make, and super quick! Cook the eggs with zucchini, goat cheese and roasted red pepper (from a jar) and you've got a <a href="http://www.wholefoodsmarket.com/recipe/goat-cheese-and-zucchini-frittata">flavorful meal</a>. Pair with a fresh salad.</p> <h2>6. Gingery Shrimp and Couscous</h2> <p>Couscous is a great staple to any diet. Shrimp is always quick to cook (in fact, if you cook it too long, you ruin it). Pair the two together and cook with <a href="http://www.realsimple.com/food-recipes/recipe-collections-favorites/simple-couscous-recipes/gingery-shrimp-recipe">ginger, onions, and snow peas</a> and you have something delectable.</p> <h2>7. Salmon With Bok Choy and Rice</h2> <p>Salmon is super easy and quick to make, and is full of antioxidants and omega-3s. <a href="http://www.realsimple.com/food-recipes/browse-all-recipes/spicy-salmon-bok-choy-rice">Bake the salmon</a> for 8&ndash;10 minutes and steam bok choy simultaneously with minute rice and your meal is complete.</p> <h2>8. Pasta With Heirloom Tomatoes, Goat Cheese, and Basil</h2> <p>This atypical pasta doesn't have marinara, but instead a combination of <a href="http://www.myrecipes.com/recipe/pasta-heirloom-tomatoes-goat-cheese-basil">country ham, arugula, tomatoes</a>, and more. Buzzfeed compiled an additional <a href="http://www.buzzfeed.com/melissaharrison/easy-pasta-recipes#.koq2MNN6k">27 pasta dishes</a> that are all under 30 minutes. For instance, if faced with the choice of either grabbing fast food or purchasing some <a href="http://www.wisebread.com/10-reasons-to-stop-buying-gas-station-food">convenience foods</a> at the grocery store, you are better off buying bagged salad or jarred sauce. And if you work, have a relationship, kids, pets, and outside interests, you have to make choices about how you spend your time and money.</p> <p>Which brings me to this list. I went through my freezer, refrigerator, and pantry looking for my favorite shortcuts. I love these time-savers and won't give them up.</p> <h2>1. Grated Cheese</h2> <p>Sometimes I just want a couple of tablespoons for a baked potato, or to top some scrambled eggs. If I grate it myself, then I have to unwrap the cheese, get out the grater, grate the cheese, wash the grater, and put away the cheese. The alternative: buy a bag of pre-grated cheese, unzip, sprinkle cheese, re-close bag, and refrigerate. I never used to buy grated cheese until my husband pointed out that sometimes, on sale, the price per ounce for grated is actually less than the large block. Pay less for convenience? Count me in.</p> <h2>2. Chopped Nuts</h2> <p>I find that I fool myself with those big bags of nuts from Costco. When they come out in October, I think oh, yes, this is the year I'll bake cookies for everyone; I need this giant bag of nuts. Well, we all know about those good intentions. Nuts do have a shelf life. Sure, you can freeze them, but the odds of your remembering that you have those frozen nuts are not great unless you're a prepper. So, yes, I occasionally buy those little half-cup packages of pre-measured, pre-chopped nuts.</p> <h2>3. Olive or Canola Oil Spray</h2> <p>I resisted these oils-in-a-can for a long time before finally giving in, thinking they were an unnecessary expense. Oh, the ease of simply spraying a pan, or barbeque rack, instead of getting out a paper towel or a pastry brush! Now I own specialized sprays, too &mdash; canola, olive oil, and &quot;grilling&quot; spray. I do not use them on my frying pans, at the manufacturer's recommendation, but I love them for baking cakes and cookies or roasting vegetables.</p> <h2>4. Teabags</h2> <p>No argument here &mdash; loose tea makes a better-tasting cup, but I don't always have time to clean up the mess it makes. Especially at work, a teabag is easier and more practical (no one wants to deal with my loose tea in the sink, I am sure). Plus, by the time I heat water, then pack a tea ball, use it, empty it, and wash it, there went my break. Bags are just faster and less messy.</p> <h2>5. Dijon Mustard in a Squirt Bottle</h2> <p>I bought the mustard in the plastic squirt bottle (instead of the usual jar) because it was on sale, not anticipating how much easier it would be. Also, the lid doesn't get gunky; I like that for cleanup. You can shake it, rather than getting a spoon to stir it up. Because it was so convenient, I found myself making more sauces (add to a little butter and stir into vegetables, or spoon over grilled chicken). I also starting using it more often on sandwiches, since it is easy, has lots of flavor, and fewer calories.</p> <h2>6. Bagged Salad</h2> <p>In a hurry? You could stop and buy fast food. Or, you could buy a bag of salad, slice a grilled chicken breast on top, and add dressing. Not only would that be a healthier alternative, but you'd have enough for several servings. There are also so many varieties, from Asian to cranberry-pecan, Caesar, European, American, and the like. These can be turned into a meal very easily with the addition of a little meat, fish, poultry, or beans.</p> <h2>7. Bacon Bits</h2> <p>Per ounce, yes, it is much more expensive to buy a little packet, or jar, of bacon bits. The cheaper alternative would be buying bacon on sale, cooking it, chopping it, and freezing it. But sometimes I just want a tablespoon in an omelet, or to sprinkle on a salad. Those little bags (or jars) are just enough to get the bacon flavor without a lot of mess and fuss. To be honest, when I fry bacon, I tend to nibble at the cooked pieces (as does my husband, and then the dogs always want a bite). So, for me, there probably <em>is</em> a cost savings by buying the tiny bag. Not to mention the mess that cooking bacon involves, no matter how you do it.</p> <h2>8. Breadcrumbs</h2> <p>Making <a href="http://whatscookingamerica.net/Bread/BreadCrumbs.htm">breadcrumbs</a> is a great use of stale bread. I save pieces and ends in the freezer and those all become croutons or bread pudding, at some point. But as for making crumbs, naah. They aren't hard to make, but I have really grown to prefer these two options: Panko (Japanese breadcrumbs) or smashed Ritz crackers. Panko makes for superior fried chicken as well as fried vegetables, such as zucchini or eggplant. Shake chicken in a mixture of white flour (and a little rice flour, for super crispiness) and seasonings. Dip into egg wash, then roll in panko; bake or fry. Ritz crackers, or their knock-offs, are at their best when smashed to oblivion and used for breading (try dipping that chicken in egg wash, then rolling in a combination of grated cheddar cheese, smashed crackers, and seasonings; bake).</p> <h2>9. Ready-Made Pie Crusts</h2> <p>Ever since <em>Bon Appetit</em> grudgingly gave its green light to using Pillsbury pie crusts, I never looked back. I've always been crummy at making crusts from scratch, and they gave me license to make pies, both savory and sweet, with decent success. They come two to a package, which ends up being very handy &mdash; and they freeze well. If you bring somebody a pie, they are going to love you regardless of whether you made your crust from scratch.</p> <h2>10. Spaghetti Sauce in a Jar</h2> <p>I truly prefer my own homemade, simmer-all-day marinara, but in a pinch, a purchased jar of pasta sauce works. It is good over noodles, in an impromptu calzone, or on a pizza. The less expensive brands tend to contain corn syrup and, to me, are quite sweet. I watch for better brands to go on sale. There are several &quot;celebrity chef&quot; sauces out, now; some are worth a try.</p> <h2>11. Rotisserie Chicken</h2> <p>Ah, the Costco $5 rotisserie chicken. Need I say more? When you can't even buy a dang chicken and cook it for yourself for that price, well, load up. I use the carcasses to make chicken broth, but if I am pushed for time...</p> <h2>12. Canned Chicken Broth</h2> <p>It's very handy, isn't it? Some brands are dollar-store cheap, but if you are watching for MSG, be careful. There are brands that do not contain MSG; they naturally cost a little more. Even if you are a purist who wants to only make your own, if you are sick, I promise you there is nothing better than that bowl of chicken broth with your Jell-O. It is worth keeping around just for that emergency.</p> <h2>13. Frozen Vegetables</h2> <p>Watch for sales and load up! My favorites are mixed veggies, which are great in soups and pot pies; spinach, for stuffing mushrooms and quiche; and peas, for salads and fried rice.</p> <h2>14. Canned Beans</h2> <p>If you are watching your sodium, look for the brands without added salt. I prefer to rinse mine, too. The things you can do with a can of beans! Kidney beans make a quick chili (vegetarian or with added burger). Garbanzos quickly become hummus. Cannellini beans can go into soups or pasta dishes. Pintos with rice are a family favorite. Black beans make a salad a meal. The alternative, and the way I learned to cook beans, is to soak dried ones. This is definitely a cheaper method, to be sure, but you had better be a good meal planner. Lace Earring Holder</h2> <p>This <a href="http://www.u-createcrafts.com/2010/04/creative-guest-trey-and-lucy-lace.html">lace earring holder</a> from U-Create is the perfect gift for your favorite style maven. Spray-paint a thrifted picture frame in the color of your choice, and tack a pretty piece of lace onto the back for a quick and beautiful earring holder.</p> <h2>3. Sisal Rope Bowl</h2> <p>This <a href="http://www.centsationalgirl.com/2011/07/sisal-rope-bowl/">sisal bowl</a> by Centsational Girl looks so beautiful (not to mention expensive) and is the perfect easy gift to make as a housewarming or wedding gift. Framed Silhouettes</h2> <p>Classic framed silhouettes look great in anyone&rsquo;s home and make a thoughtful gift. All you need is a photograph with the person you want to silhouette in profile. Blow the photograph up to the size you want and print it out (black and white is fine) on your home printer. Cut out the head, neck, and tops of the shoulders. Trace around the shape you&rsquo;ve cut out onto black or colored paper (or better yet, a pretty patterned paper), and cut out the new shape. Glue it onto a contrasting background, and put it in a pretty frame. You don&rsquo;t have to do a profile; a whole-body silhouette of one person or several people works just as well.</p> <h2>6. Thus, I offer you some of the best travel tips that just might save you some money.</p> <p>As the dollar falls, Go Budget Travel offers us the <a href="http://gobudgettravel.com/budget-travel-destinations/11" title="Go Budget Travel">budget travel costs</a> of countries around the world. Believe it or not, the dollar isn't necessarily falling against ALL the world's currencies.</p> <p>Since <a href="http://current.newsweek.com/budgettravel/" title="This Just In">they</a> also offer an article on <a href="http://current.newsweek.com/budgettravel/2007/09/affordable_hotels_in_new_york.html" title="This Just In">affordable lodging in New York City</a> , of all places, the folks at This Just In are officially my favorite cool travelers this week!</p> <p>The Times Online's <a href="http://travel.timesonline.co.uk/tol/life_and_style/travel/where_to_stay/article2452365.ece" title="Budget Hotels">list of budget hotels</a> is quite comforting--maybe I'll still be able to go to France even if the dollar keeps falling.</p> <p><a href="http://www.ozbus.co.uk/index.html" title="Ozbus">Ozbus</a> , while it costs a lot of money, is a much better deal than you'll get doing a trip like this on your own (I started pricing one out once, but it was so depressing I stopped). Besides, it would be like living in your very own reality show for 2 months! I mean, imagine the catfights you could see when you're traveling with the same people for that long!</p> <p><a href="http://travel.yahoo.com/p-interests-20473703" title="Yahoo Hidden Places">These hidden destinations</a> sound like fun, especially the one in Nepal! Of course, now that Yahoo! published them, we should all hurry up and get there before they're not so hidden anymore.</p> <p>On the other hand, avoid <a href="http://swimatyourownrisk.com/2007/05/20/the-worlds-most-shark-infested-beaches/" title="Shark Infested Beaches">these destinations</a> --the pictures alone are enough to scare me! And if we have to be more choosy about where we spend our money, then hey, the sharks? Just not worth it.</p> <p>Thanks guys! I love that place. It&#39;s a great resource for those &quot;how to&quot; videos that make life easier, cheaper and quite often, more fun. I thought I&#39;d share some of my favorite gadget hacks from the past few months. I&#39;ve used them all, they all work 100% and they&#39;re quick and easy. No real skills required.</p> <p><strong>1: Make your own professional Noise Cancelling headphones for $20.</strong><br />I work in a cubicle farm. Not that I mind, most of the time it&#39;s got a good vibe. But when I want to get down to some serious writing, I need to do it with no distractions. My boss got me a pair of $200 noise cancelling headphones. They&#39;re ok, but not great. So I searched the web for a recipe to find a DIY pair, and Metacafe had the solution - all for less than $20. I was tired of bringing the charger to and from work, often I would leave it at my desk and be left without it at the weekend. I had a spare charger but it was on the fritz. Then I wondered if I could use it to make a USB charger. I was right and it was Kipkay (the man who made all of these videos) who came to the rescue. Well, my mind is sometimes a little forgetful and I work far enough from the car park to see my car but not lock/unlock it without walking out of the building. And this became a pain if I hadn&#39;t remembered to lock the car. Metacafe gave me a simple way to boost my car remote range by around 50 feet. Now I can lock it from my desk. My setup cost a little more than $10, coming in closer to $15, but it&#39;s still a steal for great underwater shots.
