What's Cooking? A Zesty, Three Ingredient Gourmet Cheese Spread
Since we are on the road today running major errands, I'm posting a really great party appetizer recipe from a former restaurant in my home town. People used to go to this place (now closed) just to order this cheese spread that came with melba rounds, crackers and crunchy bread sticks.
This spread recipe is fabulous, and was carefully guarded by the restaurant staff. In fact, we had to get the waitress a little tipsy at a party once in order to even know what was in it. Since they've been closed for years, and I've never seen any other restaurant offer this spread, I figure it's OK to share the recipe. I suppose you could use any brand of sharp cheese spread the directions call for, but the brand used at the restaurant was Wiz Pride. It's basically two parts of that to one part of the second cheese on the list. In addition to working well with bread sticks and crackers, this spread is also nice with celery sticks.
In addition to having a ton of zing due to the ingredients, I love this recipe for how quickly it goes together. In about 5 minutes, you've got something really fabulous to offer people and it involves no cooking whatsoever. I like serving this in a crock with a pate knife and the crackers / veggies set next to it. But if you aren't in a rustic mood, you can display it in whatever way works for you. OK, I tried something more streamlined in the interest of having things look more like commentary. While loads of people clicked through, apparently some prefer not to. So, here it is:
1 large container of plain sharp cheddar spread (the soft spreadable kind), 1/2 of a regular sized container cottage cheese, 1 heaping tablespoon of horseradish. Combine all ingredients until well blended. Serve chilled with crackers or celery. You can add more horseradish if you want more zing.
Regarding the ounce size . . . I've made this recipe in a few different countries with different sizes of available product. But the two to one ratio (two parts sharp cheddar spread to one part cottage cheese) trick should enable anyone to modify this recipe no matter where they are.
