Uh-oh...best cheesesteak debate territory! This could go on and on! (Not that talking about sandwiches forever is a bad thing...)

A former Philadelphian myself, that's one thing that I love about cheesesteaks -- that many of the best come from those little hole-in-the-wall places. I never got to try it, but I remember when some highly rated cheesesteaks used to come out of Grilladelphia, the restaurant that was in the Exxon station at York and Aramingo.

I haven't checked it since I bought my car in 2003. Unless you are using and needing credit or know you have credit issues, I can't see paying to get your score.

  • How to Make Moonshine   14 years 34 weeks ago

The thing about freeze-concentration is that it concentrates everything—alcohol, sugar, flavor. So the main limit is that at some point the flavors get over-strong. Happily, it's easy to control and to fix: Keep freezing and throwing away the ice until it gets the way you want it, then stop. If you go a little too far, just add a little water to get it back to the way you like it.

Freeze concentrating will concentrate the methanol if any is present. But if you've just fermented apple juice, you're not going to have any significant quantity of methanol.

Perhaps the best thing about this technique is that it's free, at least in the winter. Just leave a barrel outdoors in the cold, and throw away the ice that forms overnight.

  • The Dirty Secrets of Food Processing. Strong Stomach required.   14 years 34 weeks ago

I was drinking a cold glass of OJ when I read this.. fml. I couldn't finish it. And, I kind of felt like a bad person when I got to the end of your article when it woke about facial structure. I'm pregnant. Good read. I definitely learned something. I wish we had more access to "good" food. Seems like unless you grow it and pick it yourself, it is not as easy to to find the stuff that is better for you and not break the bank account. Thanks.

totally wonderful site. . . thank you

we have been making simple cider here (in amsterdam) what's called hard cider in the US. . . .

we then placed a bottle in the freezer overnight. . .partially unfroze it the next morning, removed a lot of the remaining ice and bottled the liquid that came off. . . . it looks and smells fine. .

    two questions:

    * is there any limit to how many times we can do this -- how high an alcohol content can we get?

    * are there any methanol or other dangers at all with this process?

    thanks. . . . cider fan

So far my batch has lasted a week or so, and apart from the occasional spruce up with water, it seems fine. I'll let you know.

  • Sound advice for winning on a game show   14 years 34 weeks ago

I know I'm late on responding, just found this because I was trying to google why the playatmcd website was down. I'll avoid putting anyone down, but it's just like Deal or No Deal. If you pick 1 case out of 26 cases, your odds of having the $1 million (or any specific amount) is always 1 in 26, just because you find out what the other cases are later in the game doesn't change the odds. So in the Monty Hall question, you always have a 1 in 3 chance of picking the winner and a 2 in 3 chance of picking a dud, despite having a door opened. Think of it this way, the odds of getting heads in a coin flip is always 1 in 2 (ok if you're too technical 1 in 2.0000000000000009 because the coin could land on the side and be neither head nor tails, but ignore that.) But the odd of getting heads 20 in a row is over 1 in a million. So if you flipped the coin and got 19 heads in a row, the odds of the 20th coin flip being head doesn't change, it's still 1 in 2.

  • Ask the Readers: Do You Know Your Credit Score?   14 years 34 weeks ago

Well, I USED to know it. Two years ago, it was 799. I was told to cancel my unused credit card accounts to boost it. It's now at a 740. Who knows what it is today.

  • Ask the Readers: Do You Know Your Credit Score?   14 years 34 weeks ago

I check my credit score once or twice a year. More importantly, I check my credit report 3 times a year for anything I don't recognize.

There are 3 credit reporting agencies that have to each give you one free report per year, so I have Google Calendar remind me which report to request when.

  • Ask the Readers: Do You Know Your Credit Score?   14 years 34 weeks ago

I do not know my score. I print my free credit report from the 3 reporting agencies each year (one per quarter) so I can stay alert to any changes or potential problems. But I have never wanted to pay the $7 fee to get my score. I guess I'm a cheapskate. :-)

  • Ask the Readers: Do You Know Your Credit Score?   14 years 34 weeks ago

  • 5 Things Our Realtor Told Us That Weren't True   14 years 34 weeks ago

So right on the ridiculous "outgrowing" thing. Many of us would _like_ more space, but seriously most people in the world have less space than my family of 5, and we are in 1400 square feet, no finished basement. Totally normal anywhere but suburban America in 2011.

My favorite memory was at the end of Pat Flynn's presentation when we all put our hands up and he told us to reach higher. I thought that was really clever, yet not too tacky, and it was a great message.

I also enjoyed the "Extreme Frugality" video from Ramit. I had never seen it before, and I thought it was hilarious!

  • Fly With a Little Help From Your Friends: Social Travel Planning   14 years 34 weeks ago

Nice article. I checked out Gtrot - it doesn't look like it suggests places to go based on friends check ins. It only shows which friends live there and which friends have visited that city. Kind of nice, but not what you described.

    Gogobot seems more interesting.

Aww, you guys are too nice. Scrivener is a wicked good tool for writing ebooks and other large projects. I think I was their biggest advocate at the conference and recommended it to about 20 people.
