A: Mine is both budget-friendly and comforting to me, dressing! I make it mostly from scratch, and use lots of fresh veggies and everyone raves over it. I freeze odds and ends of bread loaves, buns, french bread, etc., and use a Jiffy corn muffin mix.
Impossible Salmon Pie with biscuit mix, eggs, milk, cheese, canned salmon, and vegetables has become my go-to comfort food in the last few years.
Impossible Pies are named because they make their own crust as they bake. The recipes call for Bisquick, but I use the whole grain Hodgson Mills Insta-Bake instead to add extra fiber and protein.
My favorite frugal comfort food is a sugar-free Jello shake. Dissolve your favorite flavor of Jello in a half-cup of boiling water. Add it in a smoothie maker to about a couple of cups of ice cubes and some fruit, plus a little milk or cream if you want. Blend until smooth. Let it set. Just like a fruity parfait!

I am in the final month or two of getting some fairly large balances paid down to $0 over the last year and a half. Just went through all the statements since we started paying down to the present and put the total amounts paid, interest paid, and the amount we kept adding to them (for awhile) on a spread sheet - the bottom line totals were a real gut shot. Never again!
Macaroni and cheese (made for real, not out of a box) and apple crisp are my favorite cheap comfort foods. Fried egg and cheese sandwiches are a close runner up...and now I'm hungry. :)

I have been using it just for a few minutes, but it looks good enough. It lets you add email, Twitter and Facebook. I have not found any other email aggregator as user-friendly and professional as Threadsy, which would have been my first suggestion, but there have been notifications in their blog that the service is shutting down as of Nov. 2nd 2011.
The key to using dry beans is to make them ahead of time. The cooking part is easy- I add 1 pound of dried beans to 6 cups of water and bring it to a simmer in a dutch oven on the stove. I cover the dutch oven and stick it in the oven at 350 for 1 hour. After an hour, I add some bouillon and then pop them back in the oven for another 1/2-1 hour, depending on what kind of beans they are. At this point, they are done! No pre-soaking is necessary. Very minimal work on my part and I get to make some tasty varieties that you would never find canned. I usually freeze 2/3 of the batch and put the rest of them in the fridge. When I use up the beans in the fridge, I move a container from the freezer into the fridge. This cooking method is one that I got from the Rancho Gordo heirloom bean cookbook. I highly recommend it!
