My favorite frugal comfort food is a dish I call "Sandy Surprise", comprised of a can of garbanzo beans mixed with a can of diced tomatoes. Just heat through and eat. The "surprise" is how delicious, affordable, and healthy this is!
Good article but I always hate the 15% mutual fund argument. I started when I was 25, have put at least $1000 a year in there, keep a strict eye on my portfolio, do my research, and make occasional adjustments. I'm 40 now and I highly doubt there will be anything close to $340,000 in there by the time I'm 55. Where are these mythical 15% average return mutual funds? Anyone know? Even if you search for the best performing funds in the world, most of them are sitting around 8% tops for a 20-year return.

It's something you can make as simple or as complicated/fancy as you want (I usually opt for very simple like Potato Buds in the box or microwave mashed potatoes). You can eat it when you're sick or well. It's just all warm and soft and reminds me of big family dinners when I was very young. Good stuff!
I've always loved the canned jellied cranberry stuff at Thanksgiving. That's my favorite budget dish and comfort food on that day. I like real cranberry sauce too, but you can't beat the satisfying whoosh as the entire can-shaped mass of cranberry slides out. :)
layer thinly sliced potatoes, salted and peppered with pats of butter between each layer (and the bottom) in a cast iron skillet. Baked until golden brown.
My favorite is soup. I save left over vegetables(like the corn cup off a leftover cob) a few tablespoons of green beans that were not eaten, etc and freeze them. I also freeze the liquid from cooked vegetables. When I have a tupperware container full, I just add a chopped onion and some hamburger meat, home canned tomatoes and it makes a very frugal soup.
Someone hit our car at church and has now filed a claim on his insurance. We turned in an estimate, at his request, but now we would just like to have the money instead. (His trailer hitch hit the front bumper, which we can easily conceal with a front license plate tray.) We've had to do more legwork than I would've thought necessary since it was his fault (and he also left without telling us about it). We had to call his insurance company and then call the adjuster across state. She told my husband that she would release the check to the body shop after the repairs are complete. After telling the body shop that we would just like to have the money, they've suggested that we tell the adjuster we want to "cash it out." Will the insurance company give us the money? It's less than $900. (We do owe a little against it, but do we have to tell them that?)

My favorite Thanksgiving budget dish is deviled eggs. They are cheap because it is only one dozen eggs split in half and we add pickle, mustard and mayonnaise.
My number one comfort food: rice n' beans.
Nothing like it - nutritious, delicious, satisfying. Simple preparation, versatile, convenient.
I fix it up à la Asian, Cajun, Malaysian . . . endless possibilities.
My motto: If you got rice n' beans, you got it made.
