Every Thanksgiving, I plan my family's meal with the intention of having leftovers. It's not just a matter of avoiding waste, though. I've found that a lot of leftover meals _ including tasty turkey sandwiches and potato patties — are surprisingly cheap, especially when you factor in all the heavy work has already been done. Depending on how big your turkey is, though, you may want more than just one leftover option — after a few big Thanksgivings, I've come to the conclusion that every cook should have plenty of leftover options.

So it's The Day of the Turkey (at least here in the US) and we all know there will be leftovers. Since I can only eat so many TLT (Turkey, Lettuce, and Tomato) sandwiches, I've come up with some easy recipes and ideas so all that tasty bird doesn't just go bad.

Until recently, I was using one of those organic delivery services that bring fresh veggies to your doorstep once a week. It was a pretty good bargain for the price, the veggies were varied and delicious, and I got away with avoiding the grocery store for days at a time.

Tortilla chips go stale really fast in moist environments. REALLY humid places, like the Georgia in the summer, can sog up a bag of crisps in mere minutes. It takes a little longer where I live for tortilla chips to be inedible, but they don't last more than a week after opening, usually.

I hate to throw out food, so I always try to figure out some way to use up stale and close-to-bad food, usually in some really awful culinary experiment, before throwing it away. So imagine my delight to find that there is actually a really good recipe for using up old tortilla chips.

mouthfulI just started to clean out my fridge, and had to suppress a shudder at some of the things that I found towards the back. Food that hadn’t already grown two legs and left my kitchen in its on volition was snarling menacingly from the “crisper”, which in this case was holding a bin of limp celery and what was once probably kale.
