    Another way to get thick yogurt is how we make it in northern india... All the steps are the same as mentioned above, except that the yogurt is incubated in unglazed earthen pots known as "bhaaN"... These pots are porous and water is slowly but continuously lost by evaporation, giving a thick yogurt with curtard-like consistency... Ofcourse, owing to our warm climate, we don't really need an incubator... During the winter we just keep the pots near near the warm stove, overnight...
    A famous variation to yogurt is "mishti doi" (literally, sweet yogurt) in bengal... The milk is heated with sugar or jaggery before the starter is added... Not having much of a sweet tooth, i don't like it, but most people do...

    why do you have to complicate things so much? this is how i make yoghurt: i buy raw milk from the market, bring it home, put it in a big pot. next i add it about 200 gr of fatty yoghurt to 5 litres of milk and i let it sit at room's temperature for 1-2 days depending on the season. from time to time, i mix cream with the rest. i taste it from time to time and when i like it, i put it in the freezer to stop fermentation. that's all!

    people have been making yoghurt without yoghurt makers for so much time. and stop being paranoid about germs and fat. they are both necessary for health.

    It's easy to start thinking that way—that market moves in the real world are so unpredictable that they might as well be random—but I think it's a mistake.

    The point is not to predict the future, the point is to align your personal finances with the broad trends. Get the little things right (spend less than you earn, focus your spending on what you care most about, find work worth doing), and your household can carry on pretty much regardless of these sorts of broad macroeconomic events.

    Basically, I know nothing about economics, except for two things.

    One, the economy (along with interest rates and everything else) runs in cycles, and it is very idfficult to do anything to alter these cycles.

    And two, in the end, its all a crapshoot.

    While my heart goes out to the people who are unemployed, and actively seeking employment\, However THERE ARE LOTS OF PEOPLE OUT THERE WHO SET OUT TO TAKE ADVANTAGE OF THE SYSTEM. A previous poster mentioned knowing a "friend of a friend" who is milking the system. Also, Guest #12 said: "To be honest I haven't been looking for a new position because to me the unemployment check over 1k every 2 weeks plus the time I spend with my 3 year old son is invaluable." According to him for his situation getting laid off was the best thing that could happen. For all the people who are doing that for whatever reason, as previous posters called you, you are LOOSERS.

    Why should he be allowed to stay at home with his 3 year old COLLECTING UNEMPLOYMENT? There should be safeguards in place to ensure that people are not abusing it like:

    1) Ask them to provide proof of rental payments (this will ensure that they have a motivation to get back to work - i.e. that they are not squatting with Mom & Dad who support them while they abuse the system.

    2) Ask them to provide proof of insurance - If they didn't elect cobra, and are now covered by their spouses, (and are squatting with Mom & Dad), then they are very likely to be abusing the system.

    3) Hire some of the unemployed to conduct random checks to ensure compliance with the "actively seeking employment" requirement. This will help lessen unemployment, and also by weeding out the person's who are not actively seeking employment will lower the unemployment numbers.

    Identifying the LOOSERS from the persons who really need unemployment will free up benefits for those who really need it. Why should someone stay home to take care of their kid, when the other parents go to work or are desperately looking for one?

    Xin Lu, thank you for a well written article and starting the discussion. An excellent follow up would be an article with well tought out solutions to identify the abusers of the system.
